Abstract

La presente invención se refiere a una macrocoloide proteináceo, dispersable en agua, que comprende partículas, substancialmente no agregadas, de proteínas desnaturalizadas, que tienen en un estado seco, una distribución del tamaño de partículas con diámetro medio que varía de 0.1 a 2.0 micras, aproximadamente, con menos de un por ciento del número total de partículas excediendo de 3.0 mciras de diámetro y en que la mayoría de dichas partículas son generalmente esferoidales, cuando se ven con un poder de amplificación de 800 bajo un microscopia de luz estándar, las partículas, en un estado hidratado, forman dicho macrocoloide, que tiene un carácter organoleptico substancialmente grato, de tipo emulsión.
