Claims (9)
- 에멀션의 전체 중량을 기준으로, 약 1 내지 약 70%의 탄수화물, 약 0.05 내지 약 12%의 단백질, 약 1 내지 약 50%의 식용 지방 또는 오일, 및 에멀션화제를 포함하고, 거의 모든 상기 지방 또는 오일 및 상기 단백질의 적어도 일부분이 단백질-지방 또는 단백질-오일 응집물의 형태로 분산된 상에 존재하고 응집하지 않은 단백질이 수성상에 용해되어 있거나 또는 현탁되어 있는 상기 연속 수성상과 분산상을 포함하는 저 열량 대용 지방으로 유용한 2-상 에멀션.
- 제1항에 있어서, 알기네이트, 크산탄 검, 로커스트 빈 검, 구아 검, 한천, 카라기난, 펙틴, 메틸셀룰로즈, 메틸에틸 셀룰로즈, 카복시메틸셀룰로즈, 하이드록시프로필셀룰로즈, 하이드록시프로필메틸셀룰로즈, 젤라틴, 및 이들의 배합물로 이루어진 그룹중에서 선택한 하나 이상의 증점제를 가함을 또한 포함하는 에멀션.
- 제1항에 있어서, 염산, 황산, 인산, 아세트산, 락트산, 말산, 타르타르산, 및 시트르산, 이들의 염, 및 이들의 배합물로 이루어진 그룹중에서 선택한 하나이상의 pH-조절제를 또한 포함하는 에멀션.
- 제1항에 있어서, 상기 단백질을 난백, 난백 고형물, 거의 정제된 단백질(유청 단백질, 우유 단백질 단리물, 우유 단백질 가수 분해물, 난 알부민, 콩 단백질 단리물, 및 소의 혈창 단백질 및 이들의 배합물로 이루어진 그룹중에서 선택함)로 이루어진 그룹중에서 선택한 에멀션.
- 제1항에 있어서, 상기 탄수화물을 옥수수 시럽 고형물, 옥수수 시럽, 덱스트린, 슈크로즈, 녹말, 개질 녹말, 덱스트로즈, 프럭토즈, 말토덱스트린, 폴리덱스트로즈, 다가알콜 및 이들의 배합물로 이루어진 그룹중에서 선택한 에멀션.
- 제1항에 있어서, 상기 에멀션화제를 레시틴, 모노글리세라이드, 디글리세라이드, 모노- 및 디글리세라이드의 디아세틸 타르타르산 에스테르, 모노- 및 디글리세라이드의 모노나트륨 포스페이트 유도체, 폴리올 지방산 에스테르, 솔비탄 지방산 에스테르, 폴리옥시에틸렌 모노- 및 디글리세라이드, 폴리옥시에틸렌 솔비탄 지방산 에스테르, 슈크로즈 지방산 에스테르, 푸마르산, 락트산, 타르타르산, 및 시트르산으로 이루어진 그룹중에서 선택한 산과 지방산 또는 지방 알콜의 에스테르, 푸마르산, 락트산, 타르타르산, 시트르산, 아세트산, 및 숙신산으로 이루어진 그룹중에서 선택한 산과 모노- 또는 디글리세라이드의 에스테르; 및 이들의 배합물로 이루어진 그룹중에서 선택한 에멀션.
- 제1항에 있어서, 상기 식용 지방 또는 오일을 식물성 유지, 수소화된 식물성 유지, 정제된 동물성 지방, 폴리불포화 오일, 부분적으로 수소화된 카놀라유, 부분적으로수소화된 면실유, 부분적으로 수소화된 대두유, 부분적으로 수소화된 옥수수유, 부분적으로 수소화된 해바라기유, 부분적으로 수소화된 홍화유; 및 이들의 배합물로 이루어진 그룹중에서 선택한 에멀션.
- 제1항에 있어서, 상기 탄수화물이 약 5 내지 약 60%의 농도로 존재하고; 상기 단백질이 약 0.5 내지 약 5%의 농도로 존재하고; 상기 식용 지방 또는 오일이 약 5 내지 약 40%의 농도로 존재하고; 상기 에멀션화제가 약 0.1 내지 약 2.5%의 농도로 존재하는 에멀션.
- 보통 존재하는 트리글리세라이드의 적어도 일부분을 제1항의 에멀션으로 대체한, 마요네즈 조성물, 샐러드용 드레싱, 냉동 디저트, 스프, 칩, 크랙커 또는 야채를 위한 침지액(dips), 케익 또는 쿠키용 충진물, 케익 프로스팅(frosting), 과자, 및 거품 디저트(Whipped dessert)로 이루어진 그룹으로부터 선택된 식료품.
