Abstract
인체에 유해한 화학 첨가물이 포함되어 있지 않은 햄 소시지에 관한 것이다. 본 발명에 따른 농산물을 이용한 햄 소시지는 화학 첨가물이 전혀 들어가 있지 않기 때문에 웰빙 식품으로 소비자에게 각광을 받을 수 있다. 특히, 소시지에 포함되는 사과는 혼합되는 돼지고기의 육질을 부드럽게 할 뿐만 아니라, 갈변 현상으로 인해 아질산 나트륨과 같은 화학 착색제를 대체하는 효과 및 사과에 포함된 유기산으로 인해 화학 방부제를 대체하는 효과가 있다. 또한, 소시지에 포함되는 사추출한 혼합농축콩단백, 조직 식물성 단백 및 조직 대두 단백을 사용한 대체 소시지 제조방법 및 상기 제조방법에 의해 제조된 대체 소시지에 관한 것
