Claims (5)
- 분쇄한 쌀가루 100중량부에 70 내지 80 ℃의 온도에서 10 내지 15분간 익힌 아로니아를 믹서기로 분쇄하여 체에 내린 아로니아 액즙 30중량부를 상기의 쌀가루에 골고루 스며들도록 저어준 후 물 400중량부를 넣고 혼합액을 1차 가열하는 단계;
1차 가열한 혼합액에 엿기름을 넣고 60~70℃의 상태로 유지하면서 4 ~ 6시간 당화시킨 후 1 ~ 2시간 중불로 가열하는 2차 가열하는 단계;
2차 가열과정을 거친 아로니아 혼합액을 여과기에 넣어 불순물을 제거한 후 맑은 여과액을 센불에서 4시간 가열하여 점성이 생기기 시작하면 10~15분 간격으로 농축시켜 아로니아 조청을 제조하는 단계;
박력분 100중량부, 달걀 2- 5 중량부, 베이킹 파우더 1 내지 2 중량부, 버터 10 내지 15중량부, 소금 1 내지 2 중량부, 상기의 아로니아 조청 10 내지 20중량부 및 상기 아로니아 액즙 10 내지 20중량부를 혼합하여 반죽물을 제조하는 단계;
상기 반죽물을 0.4㎝의 두께를 갖도록 평평하게 밀어서 사각형의 쿠키모양 셀이 다수 형성된 성형틀로 압착 절단하여 쿠키성형물을 얻은 다음, 쿠키성형물을 철판 위에 가지런히 배열한 상태로 오븐에 넣고, 180℃로 15분간 구워 쿠키를 제조하는 단계;
