Claims (7)
- 스타치오스 함량이 7.0mg/g 건물 (dry matter) 미만이며, 제니스테인 함량이 0.2-0.6mg/g 건물이며, 비타민 E (토코페롤, 토코트리에놀) 함량은 3.0mg/g 건물을 초과하는, 개선된 효과를 갖는 대두 생성물 (soya bean product).
- 제 1항에 있어서, 스타치오스 함량이 2.0-4.0mg/g 건물이고, 제니스테인 함량은 0.58mg/g 건물이며, 비타민 E 함량은 3.8-4.0mg/g 건물인 대두 생성물.
- 제 1항에 따른 생성물을 0.1-100wt%의 양으로 함유하는, 인간 또는 동물 섭취에 적합한 조성물.
- 제 3항에 있어서, 제 1항에 따른 대두 생성물을 5-50wt%의 양으로 함유하는 조성물.
- a) 20-60초 주기 동안 최대 60분 간격으로 3회 10-30℃ 온도의 물로 2-20㎝ 두께층의 대두 종자를 분무 세정함으로써 대두 종자를 사전처리(pre-conditioning)하는 단계;
b) 1.5-2.5시간의 주기 동안 15-35℃의 물에 침수시킴으로써 종자의 수화를 지속하는 단계
c) 침수 물을 배수시킨 후, 수도물을 사용하여 6-8시간 간격으로 4-5회 분무를 반복하는 단계;
d) 5-8mm 길이의 싹이 보일 때까지 또는 적어도 48시간 동안 종자를 발아시키는 단계;
e) 100℃의 물에서 5분 동안 종자를 삶음으로써 발아 과정을 중단시키는 단계;
f) 발아된 종자를 분리하는 단계를 포함하는 제 1항에 따른 대두 생성물 제조 방법.
- 제5항에 있어서,
식품 생성물에 적합한 형태를 달성하기 위해 종자를 분쇄 및/또는 형상화하는 단계를 추가로 포함하는 대두 생성물 제조 방법.
- a) 20-60초 주기 동안 최대 60분 간격으로 3회 10-30℃ 온도의 물로 2-20㎝ 두께층의 대두 종자를 분무 세정함으로써 대두 종자를 사전처리(pre-conditioning)하는 단계;
b) 1.5-2.5시간의 주기 동안 15-35℃의 물에 침수시킴으로써 종자의 수화를 지속하는 단계
c) 침수 물을 배수시킨 후, 수도물을 사용하여 6-8시간 간격으로 4-5회 분무를 반복하는 단계;
d) 5-8mm 길이의 싹이 보일 때까지 또는 적어도 48시간 동안 종자를 발아시키는 단계;
e) 100℃의 물에서 5분 동안 종자를 삶음으로써 발아 과정을 중단시키는 단계;
f) 발아된 종자를 분리하는 단계에 의해 얻어지는, 개선된 효과를 갖는 대두 생성물.
