Claims (11)
- 원료육, 지방, 양념 소스, 떡 및 결착제를 포함하는 고기 와플.
- 제1항에 있어서, 상기 원료육은 돈육 분쇄육인 것인, 고기 와플.
- 제1항에 있어서, 상기 원료육은 고기 와플의 전체 질량 대비 50 내지 80 중량% 포함되는 것인, 고기 와플.
- 제1항에 있어서, 상기 지방은 고기 와플의 전체 질량 대비 10 내지 20 중량% 포함되는 것인, 고기 와플.
- 제1항에 있어서, 상기 떡은 쌀떡인 것인, 고기 와플.
- 제1항에 있어서, 상기 양념 소스는 간장, 노두유, 설탕, 마늘, 파, 배, 생강, 물엿, 참기름, 후추 및 글루타민산나트륨로 이루어진 군으로부터 선택되는 1종 이상의 양념을 포함하는 것인, 고기 와플.
- 제1항에 있어서, 상기 결착제는 밀가루로, 고기 와플 전체 중량에 대해 1 내지 5 중량% 포함되는 것인, 고기 와플.
- 다음의 단계를 포함하는 제1항에 따른 고기 와플의 제조방법:

3) 상기 단계 2)에서 제조된 혼합육을 포장한 후, 와플 성형기에 넣어 성형 및 1차 가열을 동시에 처리하는 단계;
4) 3)에 가열된 와플을 급냉처리 하는 단계; 및
5) 4)에 급냉된 분쇄육 와플을 포장하는 단계. - 제8항에 있어서, 상기 단계 1)이 세절 단계는 분쇄하여 분쇄육을 제조하는 것으로 수행되는 것인, 제조방법.
- 제8항에 있어서, 상기 단계 2)에서 교반하여 혼합육을 제조한 이후 3 내지 4℃의 냉장조건에서, 5 내지 20 시간 숙성시키는 공정을 더 수행하는 것인, 제조방법.
- 제8항에 있어서, 상기 단계 3)은 200 내지 205℃로 3분 내지 8분 가열하여 수행되는 것인, 제조방법.
