- 디아실글리세롤을 40 ~ 95 중량%, 및 수크로오스 지방산 에스테르를 0.03 ~ 0.4 중량% 함유하고, 상기 수크로오스 지방산 에스테르 중의 모노에스테르 (SME) 의 함유량이 30 중량% 이상 또한 모노에스테르 (SME) 와 디에스테르 (SDE) 의 함유 중량비 (SME/SDE) 가 1.2 ~ 5 이고, 하기 식
y ≤ 34x - 1020
(식 중, x 는 유지 조성물 중의 디아실글리세롤 함유량 [%], y 는 유지 조성물 중의 SME 함유량 [ppm] 을 나타낸다. 단 y>0 이다)
을 만족하는 유지 조성물. - 제 1 항 또는 제 2 항에 있어서, 식용 유지 조성물인 유지 조성물.
