- 건조물(乾燥物)당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물(大豆乳化組成物), 또는 상기 대두 유화조성물을 포함하는 원료를 유산발효(乳酸醱酵) 혹은 산(酸) 첨가에 의해 산성화하여 얻어지는 산성 대두 소재(酸性大豆素材)를 함유하는 것을 특징으로 하는 대두 유래 원료 함유 음식물(大豆由來原料 含有 飮食物).
- 제1항에 있어서,
상기 대두 유화조성물은, 건조물당의 식물섬유 함량이 10중량% 이하이며 건조물당의 지질 함량이 35중량% 이상인 것을 특징으로 하는 대두 유래 원료 함유 음식물.
- 건조물당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물 또는 상기 대두 유화조성물을 포함하는 원료를 유산발효 혹은 산 첨가에 의해 산성화하여 얻어지는 산성 대두 소재를 포함하는 것을 특징으로 하는 유제품(乳製品) 혹은 발효유제품 대체물.
- 제1항에 있어서,
상기 대두 유화조성물 또는 상기 산성 대두 소재를 포함하는 유제품 혹은 발효유제품 대체물이, 유제품 혹은 발효유제품의 일부 또는 전부의 대체로서 사용되는 것을 특징으로 하는 대두 유래 원료 함유 음식물.
- 건조물당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물을 포함하는 원료를, 유산발효 또는 산 첨가에 의해 산성화하여 얻어지는 것을 특징으로 하는 산성 대두 소재.
- 건조물당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물을 함유하는 것을 특징으로 하는 난황 대체 조성물(卵黃代替組成物).
- 제6항에 있어서,
상기 대두 유화조성물은, 건조물당의 식물섬유 함량이 10중량% 이하이며 건조물당의 지질 함량이 35중량% 이상인 것을 특징으로 하는 난황 대체 조성물.
- 제6항의 난황 대체 조성물이, 난황의 일부 또는 전부의 대체로서 사용되는 것을 특징으로 하는 난황 대체 식품.
- 건조물당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물이, 대두원료의 일부 또는 전부로서 사용되는 것을 특징으로 하는 대두 가공식품.
- 제9항에 있어서,
상기 대두 유화조성물은, 건조물당의 식물섬유 함량이 10중량% 이하이며 건조물당의 지질 함량이 35중량% 이상인 것을 특징으로 하는 대두 가공식품.
- 건조물당의 단백질 함량이 25중량% 이상이며 클로로포름/메탄올 혼합용매 추출물법에 의한 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물을 함유하는 혈청 콜레스테롤 저감용(血淸cholesterol 低減用) 혹은 신장기능 개선용(腎臟機能 改善用) 조성물.
- 제11항에 있어서,
상기 대두 유화조성물은, 건조물당의 식물섬유 함량이 10중량% 이하이며 건조물당의 지질 함량이 35중량% 이상인 것을 특징으로 하는 혈청 콜레스테롤 저감용 혹은 신장기능 개선용 조성물.
- 제11항의 혈청 콜레스테롤 저감용 혹은 신장기능 개선용 조성물을 사용한 식품.
- 음식물의 제조에 있어서, 건조물당의 단백질 함량이 25중량% 이상이며 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물을, 유제품, 난황 및 대두원료로부터 선택되는 원료를 첨가하는 단계에서, 상기 원료의 일부 또는 전부와 대체해서 사용하거나, 또는 혈청 콜레스테롤 저감용 혹은 신장기능 개선용 조성물로서 사용하는 것을 특징으로 하는 대두 유래 원료 함유 음식물의 제조법.
- 건조물당의 단백질 함량이 25중량% 이상이며 지질 함량이 단백질 함량에 대하여 100중량% 이상이며 또한 LCI값이 55% 이상인 대두 유화조성물을, 유제품, 난황 및 대두원료로부터 선택되는 원료를 첨가하는 단계에서, 상기 원료의 일부 혹은 전부와 대체해서 사용하거나, 또는 혈청 콜레스테롤 저감용 혹은 신장기능 개선용 조성물로서 사용함으로써, 대두 유래 원료 함유 음식물의 풍미 또는 식감을 개량하는 방법.
