Abstract
본 발명에 따른 고추장 장아찌는 숙성과정에서 송이버섯과 굴비포의 수분함량이 균형을 이룸으로써 송이버섯의 탄력성, 응집성 및 강도 등의 식감이 향상되고 굴비포의 강도와 경도가 저하되어 부드러운 식감이 향상되며, 송이버섯을 건조하지 않고 채취한 상태로 사용할 수 있으므로 고추장 장아찌에 송이버섯 고유의 향과 식감을 제공하고, 건조에 따른 송이버섯의 품질 저하 및 수율 감소를 방지할 수 있다.

Claims (6)
- 조기를 준비하여 조기의 머리, 꼬리 및 내장을 제거한 후 4~6 개월간 자연건조하여 굴비를 얻는 단계;
상기 굴비를 잘게 찢어서 굴비포를 준비하는 단계;
상기 굴비포를 증기로 찌고 상온에 펼쳐놓아 수분을 제거하는 단계;
송이버섯을 채취하여 이물질을 제거하는 단계;
고추장 100 중량부에 갈아서 볶은 곡물 5~10 중량부, 물엿 3~7 중량부, 설탕 3~7 중량부, 소금 1~5 중량부 및 미림 3~7 중량부를 첨가하여 양념 고추장을 제조하는 단계;
용기에 상기 수분이 제거된 굴비포를 담고 굴비포 위에 상기 이물질이 제거된 송이버섯을 담은 후 상기 양념 고추장을 붓는 단계; 및
상기 굴비포, 송이버섯 및 양념 고추장이 혼합된 혼합물을 상온에서 10~20 일간 숙성하는 단계;를 포함하는, 송이버섯과 굴비가 함유된 고추장 장아찌 제조방법. - 청구항 1에 있어서,
상기 굴비포를 증기로 찌는 시간은 1~3 분인 것을 특징으로 하는, 송이버섯과 굴비가 함유된 고추장 장아찌 제조방법. - 청구항 1에 있어서,
상기 이물질이 제거된 송이버섯을 5~10 ㎜ 두께의 슬라이스 형태로 절단하는 것을 특징으로 하는, 송이버섯과 굴비가 함유된 고추장 장아찌 제조방법. - 삭제
- 청구항 1에 있어서,
상기 굴비포, 송이버섯 및 양념 고추장이 혼합된 혼합물은 양념 고추장 100 중량부, 송이버섯 10~20 중량부 및 굴비포 20~30 중량부로 이루어지는 것을 특징으로 하는, 송이버섯과 굴비가 함유된 고추장 장아찌 제조방법. - 청구항 1, 청구항 2, 청구항 3 또는 청구항 5 중 어느 한 항의 방법으로 제조되는, 송이버섯과 굴비가 함유된 고추장 장아찌.
