Abstract
PURPOSE: To prepare an instant CHAZUKE (assorted fish flour, etc. to be scattered on boiled rice with tea) which can be served only by pouring hot water into the container containing the CHAZUKE, by impregnating cattle or fish meat with sodium glutamate and salt under evacuated and sealed conditions, and simultaneusly dehydrating the meat.
CONSTITUTION: Fresh cattle meat, etc. cut to about 25W30mm thick is scattered with about 5W10wt% sodium glutamate, put in an impermeable plastic bag, evacuated and sealed with a vacuum packaging machine, and left to stand for about 2W10hr to effect the impregnation of sodium glutamate. The meat is taken out from the package, wrapped with a semipermeable membrane such as cellophane film, smeared with salt (≥3 times the amount of the meat), vacuum sealed, and left to stand in a cold place to effect the permeation of salt and the removal of water from the meat. The meat of cattle or fish thus processed is sliced to thin slices, and vacuum sealed in an impermeable plastic bag to obtain the final product.
