Abstract
PURPOSE: Chicken livers are scalded to remove bitter taste and bad smell, minced or ground, kneaded with flavoring soup, liaison as starch and packed in tubes, thus giving readily edible and tasty food.
CONSTITUTION: Chicken livers are incorpotated with salt and vinegar, scalded for removing bitter taste and bad smell. They are rinsed with water, thoroughly drained, then minced. Further a flavoring soup containing a variety of flavors and spices and liaisons as starch are kneaded with them and the mixture is packed in tubes or wrapped with an adequate film, then heat treated. Thus a processed food of high nutrition and high stability to long-term storage.
