Abstract
PURPOSE: To obtain a fruit juice of drink rich in vitamin C, capable of preserving its taste for a long time through the prevention of deterioration caused by oxidation, by adding both L-ascorbic acid (its alkali salt) and agar-agar to a drink comprising friut juice organs during preparation.
CONSTITUTION: L-ascorbic acid having strong reducing action, namely, vitamin C is added to a drink comprising fruit juice of orange is during preparation so that the oxidation of various substance in the fruit juice is prevented and the nutritive value of the drink is improved. An alkali salt, e.g., sodium salt of L-ascorbic acid, capable of controlling the oxidative effect of L-ascorbic acid oxidase and agar-agar comprising galactose, having reductive effect and colloidal properties capable of inhibiting chemical reactions in the friut juice solution are added to give the desired fruit juice drink.
