材料および方法
材料および試薬
フロレチン(ロット番号03K080)は、ベニエル(ムルシア、スペイン)のインテルキム、ソシエダッド アノニマにより提供された。β-カロテン(Altratene10%WSC ロット番号FEX1011004-5)は、アライド・バイオテック社(台北、中華民国台湾省)により提供された。L-アスコルビン酸(ロット番号0000224398)およびクエン酸(ロット番号0000128079)は、Panreac Quimica S.L.U(カステリ・デル・バレス、バルセロナ、スペイン)からである。カラメル染料E150D粉末(参照番号MDC/2892/15)および赤ビートジュース粉末(参照番号MDC/2893/15)は、Magnil Dye Chem(ムンバイ、インド)により提供された。飲料の調製のために、ミネラルウォーター(無発泡および発泡性)を用いた。解析目的のため、水は、二回蒸留し、Milliporeシステム(Milli-Q)を介して精製した。
飲料は、pH3.3のクエン酸を用いて媒体(浸透水)を酸性化し、原液からβ-カロテンを添加することにより調製した。本研究は、光存在下、室温で行った。
飲料は、媒体(非炭酸飲料には無発泡ミネラルウォーター、および炭酸飲料には発泡性の水)をpH3.3のクエン酸を用いて酸性化し、β-カロテンを原液から添加することにより調製した。フロレチン原液は、フロレチン400mgをプロピレングリコール10mLに溶解させることにより調製した。所望のフロレチン濃度に応じて、87.5μLまたは25μLの該溶液を酸性化された水で100mLに希釈した。
一連の実験において、飲料は、媒体(脱イオン水)をpH3.3のクエン酸を用いて酸性化し、原液からカラメルのみを添加することにより調製した。
島津製作所UVProbe2.21がロードされたコンピューターと接続された、2nm未満のスペクトル帯域幅を有する島津製作所1650PCダブルビーム分光光度計を、すべての吸光光度測定に用いた。
天然着色料の場合も、同じ測定装置を用いた。試料のスペクトルは、吸収極大を決定するため、200nmおよび600nm間で行い、吸収極大における吸光度を記録した。赤ビートの場合、最大532nmを、測定する波長として選んだ。カラメルの場合、極大(270nm)は、アスコルビン酸によってだけでなく、フロレチンによってもまた干渉された。このためおよび文献データに基づいて、測定目的のため、390nmを選択した。
Claims (8)
- 有色の飲料又は食品製品の色を少なくとも7日間安定化するための、式(I)
の化合物、又は1つ又は複数のヒドロキシル基で置換されていてもよいC 2 からC6アルカンモノ酸又は二酸とのそのエステルもしくはその塩を含む組成物であって、該有色の飲料又は食品製品が染料を含み、該染料がアナットー抽出物、アスタキサンチン、脱水ビート、カンタキサンチン、ベータ-アポ-8’-カロテナール、ベータ-カロテン、コチニール抽出物、カルミン、銅クロルフィリン(chlorphyllin)ナトリウム、グルコン酸第1鉄、乳酸第1鉄、エノシアニナ、ヘマトコッカス藻粗粉、キャロット種子油、トウモロコシ胚乳油、パプリカ、パプリカ含油樹脂、ファフィア属酵母、リボフラビン、サフラン、二酸化チタン、ターメリック含油樹脂、ビキシン、及びこれらの組み合わせから成る群から選択される天然由来の染料、又はその合成された等価物、或いは合成染料であり、
該式(I)の化合物又は1つ又は複数のヒドロキシル基で置換されていてもよいC 2 からC 6 アルカンモノ酸又は二酸とのそのエステルもしくはその塩が、該飲料又は食品製品中に約10ppmから約50ppmの範囲で存在している、
上記組成物。 - 有色飲料又は食品製品の色不安定性又は色褪せを少なくとも7日間防ぐための、式(I)
の化合物、又は1つ又は複数のヒドロキシル基で置換されていてもよいC 2 からC6アルカンモノ酸又は二酸とのそのエステルもしくはその塩を含む組成物であって、該有色の飲料又は食品製品が染料を含み、該染料がアナットー抽出物、アスタキサンチン、脱水ビート、カンタキサンチン、ベータ-アポ-8’-カロテナール、ベータ-カロテン、コチニール抽出物、カルミン、銅クロルフィリン(chlorphyllin)ナトリウム、グルコン酸第1鉄、乳酸第1鉄、エノシアニナ、ヘマトコッカス藻粗粉、キャロット種子油、トウモロコシ胚乳油、パプリカ、パプリカ含油樹脂、ファフィア属酵母、リボフラビン、サフラン、二酸化チタン、ターメリック含油樹脂、ビキシン、及びこれらの組み合わせから成る群から選択される天然由来の染料、又はその合成された等価物、或いは合成染料であり、
