移動相:1.2mMフタル酸水素カリウム/アセトニトリル(95/5)
流 速:1.5ml/min
図1によれば、陽イオンについては、ナトリウムイオン及びカリウムイオンはフラクション1から破過が起こり、フラクション19までにほぼ全量を回収できた。マグネシウムイオン及びカルシウムイオンは、フラクション1〜24で破過が起こっていた。
上記で原料として用いたニンジン濃縮汁、高硝酸ニンジン汁のモデルサンプル、上述のクロマト分離で排出されるフラクション1〜6からなる回収物、及び、フラクション1〜7からなる回収物の各々について、イオン交換水で希釈してBrix6.0に調整したものを評価試料A〜D(A:ニンジン濃縮汁、B:モデルサンプル、C:フラクション1〜6、D:フラクション1〜7)として用いて、官能品質を評価し、硝酸イオン濃度及び官能品質の評価結果に基づいて総合評価を行った。官能品質における甘味及びボディー感は、ニンジン濃縮汁を希釈した試料を基準としてこれとの比較により強弱を判断し、官能品質の評価及び総合評価は、「良好」、「可」、「不可」の3段階評価とした。結果を表7に示す。
Claims (7)
- 硝酸イオンを含有する水性液に両性イオン交換体を用いたクロマトグラフィ処理を施して前記水性液の硝酸イオンを他の成分から分離する水性液の硝酸除去方法であって、前記両性イオン交換体は、式:−(CH 2 ) m −N + (R 1 )(R 2 )−(CH 2 ) n −COO − で示される両性イオン交換基[但し、上記式中、R 1 及びR 2 は、各々、メチル基であり、m及びnは、各々、1である。]を有し、前記他の成分は、ナトリウムイオン、カリウムイオン、マグネシウムイオン及びカルシウムイオンからなる群より選ばれる少なくとも1種の無機陽イオンと、無機陰イオン及び有機酸の少なくとも一方とを含むことを特徴とする水性液の硝酸除去方法。
- 前記両性イオン交換体は、スチレン−ジビニルベンゼン共重合体を母体とする両性イオン交換樹脂である請求項1記載の水性液の硝酸除去方法。
- 前記無機陰イオンは、塩素イオン及び硫酸イオンのうちの少なくとも1種を含み、前記有機酸は、乳酸、リンゴ酸及びクエン酸からなる群より選ばれる少なくとも1種を含む請求項1又は2記載の水性液の硝酸除去方法。
- 前記クロマトグラフィ処理は、前記両性イオン交換体を固定相とする分離床に移動相として水が供給される液体クロマトグラフィ処理であり、前記クロマトグラフィ処理によって前記固定相から前記他の成分より遅れて硝酸イオンが流出する請求項1〜3の何れかに記載の水性液の硝酸除去方法。
- 前記クロマトグラフィ処理は、前記両性イオン交換体を装顛した分離床に前記水性液を通液する工程と、前記水性液に続いて水を前記分離床に通液する工程とを有し、前記分離床に通液する前記水性液の容積は、前記分離床の容積の4倍以下である請求項1〜4の何れかに記載の水性液の硝酸除去方法。
- 前記水性液は、植物組織の抽出物又は搾汁液を含む飲料原料あるいは飲料用水である請求項1〜5の何れかに記載の水性液の硝酸除去方法。
- 植物組織の抽出物又は搾汁液を含む飲料原料を調製する工程と、請求項1〜6の何れかに記載の水性液の硝酸除去方法を用いて前記飲料原料から硝酸を除去する工程と、硝酸を除去した前記飲料原料を用いて飲料を調製する工程とを備えることを特徴とする飲料の製造方法。
