Description
実験例1は、本実施例の殺菌剤、即ち、フマール酸とナイシンとの混合液がグラム陰性菌に対してどのような殺菌作用を発揮するのかを示すものである。
実験例2は、フマール酸とナイシンとの混合液がグラム陽性菌に対してどのような殺菌作用を発揮するのかを示すものである。
実験例3は、本実施例の殺菌剤を構成するフマール酸とナイシンの有効濃度範囲を確認すべく行ったものである。
実験例4は、実験例3で確認した濃度範囲のフマール酸及びナイシンの混合割合を1:1とせずに、種々変化させて調製した場合においても良好な殺菌作用が発揮されるかどうかを確認すべく行ったものであり、具体的には実験例3で確認した濃度範囲のフマール酸及びナイシンを、種々の混合割合で混合し、レジオネラ菌及び黄色ブドウ球菌に接触させた(下記表5,表6参照)。
実験例5は本実施例の殺菌剤に乳酸を加えることで、フマール酸の濃度が実験例3において確認された下限濃度以下であっても殺菌作用を良好に発揮できることを確認したものである。
先ず、75%エタノール溶液にフマール酸を4%(w/v)となるようにして溶かす。
先ず、フマール酸を湯温に溶かし0.2%(w/v)溶液を作り、ここへ乳酸を0.8%(w/v)となるように滴下混合し、希釈してフマール酸の濃度が0.03%乃至0.1%(w/v)の範囲の溶液を作る。
先ず、味噌工場等、大豆加工工場から廃出された大豆煮汁にブドウ糖及び食塩を各々3%ずつ加え溶解する。
レジオネラ菌が750個/100ml、黄色ブドウ球菌が3×102個/g、及び、バチルス菌が7×105個/ml検出された家庭用循環風呂の浴槽水200リットル(40℃)にフマール酸100gを溶かした後、ナイシンを10g溶かし、3時間循環して菌の検出を行った。尚、この場合の浴槽水中のフマール酸の濃度は0.05%(w/v),ナイシン濃度は50ppmである。
へたを取りよく水洗いした十全ナス4個(245g)をポリ袋に入れ、該ポリ袋の中に上記第三例の殺菌剤を300ml(粉末調味料及びpH調整剤(pH5.0)を適量溶解した。)を加えて該ポリ袋を密封し、10℃で4日間保存した。
食塩3%で下漬した白菜を8kgを用意し、別に市販のキムチ漬けの素で調整したタレ1.0kgに、上記第一例の殺菌剤1リットルを混合し、ここに食塩60gを添加してタレ全体を良く混合した後、白菜にタレをまぶしてポリ袋に入れ密封し、10℃で4日間保存した。
先ず、キャベツ1kgを常法により切断、水洗いし、該切断したキャベツを次亜塩素酸ソーダ水及びビタミンC液に浸漬した。
先ず、常法により麺を茹で上げ、該麺を冷流水により冷やした。この麺200gを上記第一例のフマール・ナイシン混合液に約10秒程浸漬して引き上げ、直ちにポリ袋包装した。
上記第一乃至第三例のフマール酸・ナイシン混合液を、汁器類や調理器具の殺菌に用いることで、汁器類や調理器具の殺菌が良好に行われることを実験により確認している。
Claims (4)
- グラム陰性菌に対して殺菌作用を有するフマール酸と、グラム陽性菌に対して殺菌作用を有するナイシンと、乳酸と、リン酸及びクエン酸の双方若しくはいずれか一方とを有する殺菌剤であって、前記フマール酸の濃度は0.03%乃至0.1%(w/v)、前記ナイシンの濃度は1ppm乃至100ppmに設定されており、この殺菌剤は前記グラム陰性菌及びグラム陽性菌の双方を殺菌するものであることを特徴とする殺菌剤。
- 請求項1記載の殺菌剤において、前記フマール酸の濃度を0.1%(w/v)としたことを特徴とする殺菌剤。
- 請求項1,2いずれか1項に記載の殺菌剤において、前記ナイシンの濃度を100ppmとしたことを特徴とする殺菌剤。
- 請求項1〜3いずれか1項に記載の殺菌剤において、前記乳酸の濃度を0.8%(w/v)としたことを特徴とする殺菌剤。
