Description
Claims (14)
- 糖蜜抽出液、粗糖イオン樹脂再生水抽出液、オリーブ葉抽出液からなる群より選択されるいずれか一つ以上のポリフェノール成分含有抽出液、レシチン、および食用油が混合された、抗酸化剤を含む抽出液乳化油。
- 前記ポリフェノール成分含有抽出液は、ポリフェノール含量が5,000〜20,000ppmであることを特徴とする、請求項1に記載の抗酸化剤を含む抽出液乳化油。
- 前記糖蜜抽出液または前記粗糖イオン樹脂再生抽出液の含量は5〜19%(w/w)、
前記食用油の含量は80〜90%(w/w)、
前記レシチンの含量は1〜5%(w/w)であることを特徴とする、請求項1に記載の抗酸化剤を含む抽出液乳化油。 - 前記オリーブ葉抽出液の含量は22〜75%(w/w)、
前記食用油の含量は24〜73%(w/w)、
前記レシチンの含量は1〜5%(w/w)であることを特徴とする、請求項1に記載の抗酸化剤を含む抽出液乳化油。 - 前記ポリフェノール成分含有抽出液の濃度は100〜2,000ppmであることを特徴とする、請求項1に記載の抗酸化剤を含む抽出液乳化油。
- 前記食用油は、大豆油、キャノーラ油、トウモロコシ油、オリーブ油、ひまわり油、および玄米油からなる群より選択されるいずれかであることを特徴とする、請求項1に記載の抗酸化剤を含む抽出液乳化油。
- 糖蜜抽出液、粗糖イオン樹脂再生水抽出液、およびオリーブ葉抽出液からなる群より選択されるいずれか一つ以上のポリフェノール成分含有抽出液、レシチン、食用油が混合された抗酸化剤を含む抽出液乳化油が、10〜1,000ppmの濃度で大豆油に添加されたクッキングオイル。
- 糖蜜抽出液、粗糖イオン樹脂再生水抽出液、およびオリーブ葉抽出液からなる群より選択されたいずれか一つ以上のポリフェノール成分含有抽出液、レシチン、食用油が混合された抗酸化剤を含む抽出液乳化油が、10〜2,000ppmの濃度でキャノーラ油に添加されたクッキングオイル。
- 糖蜜または粗糖イオン樹脂再生水からポリフェノール成分を分離精製と濃縮して抽出液を得る工程、またはオリーブ葉抽出液を準備する工程;
前記糖蜜抽出液、粗糖イオン樹脂再生水抽出液またはオリーブ葉抽出液をレシチンと食用油と混合して抽出液乳化油を製造する工程;を含む、抗酸化剤を含む抽出液乳化油の製造方法。 - 前記分離精製は、
吸着樹脂が充填されたカラムを通過させてポリフェノール成分を吸着させることを含むことを特徴とする、請求項9に記載の抗酸化剤を含む抽出液乳化油の製造方法。 - 前記吸着樹脂に吸着されたポリフェノール成分を30〜90%(v/v)のエタノールを使用して脱離することを特徴とする、請求項10に記載の抗酸化剤を含む抽出液乳化油の製造方法。
- 前記吸着と脱離は、
SV[Space Velocity:流量(L)/時間(Hr)/樹脂量(L)]が0.5〜10、
BV[Bed Volume:流量(L)/樹脂量(L)]が5〜20である条件で行われることを特徴とする、請求項11に記載の抗酸化剤を含む抽出液乳化油の製造方法。 - 請求項9ないし12のいずれか一つに記載の製造方法により製造された抗酸化剤を含む抽出液乳化油を、10〜1,000ppmの濃度で大豆油に添加するか、または10〜2,000ppmの濃度でキャノーラ油に添加することを特徴とする、クッキングオイルの製造方法。
- 請求項13により製造されたクッキングオイルを使用して製造される、油脂加工食品。
