背景技术
常见的食用油大多为植物油,包括花生油、菜籽油、火麻油、橄榄油、山茶油、棕榈油、葵花子油、芝麻油、胡麻油、核桃油、牡丹籽油等,主要成分为不饱和脂肪酸甘油酯,热稳定性差,易氧化聚合,同时,部分食用油原料来源于高淀粉、高糖植物,比如粟米油、大豆油、米糠油、玉米油等,因此,在植物油的压榨、脱酸、脱色过程中,往往会产生少量葡萄糖,由于还原性单糖在加热时,会引发美拉德反应和焦糖化反应,致使植物油褐变和变黑,随着温度的持续上升,褐变程度越严重,影响食用油品质和色泽。
申请号为CN201610207529.X的专利,公开一种含茶多酚的食用油制备方法,通过掺入脂溶性茶多酚改善食用油的抗氧化性,但对于美拉德反应和焦糖化反应的抑制效果不明显,当高温加热食用油时,易出现褐变、发黑的现象,降低食用油光泽度和质量。

针对现有技术的不足之处,本发明的目的在于提供一种食用油及其调配工艺。
本发明的技术方案概述如下:
一种食用油,包括以下重量份原料:花生油50-60份、大豆油30-40份、山茶籽油16-20份、核桃油11-15份、葡萄籽油10-12份、阿甘油8-10份、火麻油6-8份、米糠油5-7份、羊油10-14份、油脂改良剂0.1-0.3份;
其中,油脂改良剂包括以下重量比组分:葡萄糖氧化酶23-49%、卵磷酰乙醇胺20-30%、纳米硒9-15%、维生素E2-3%、茶多酚1-2%、番茄红素5-7%、卡诺醇4-6%、绿原酸2-4%、植酸8-10%。
优选的是,所述食用油包括以下重量份原料:花生油55份、大豆油35份、山茶籽油18份、核桃油13份、葡萄籽油11份、阿甘油9份、火麻油7份、米糠油6份、羊油12份、油脂改良剂0.2份。

S1:在25-30℃氮气条件下,按重量份混合葡萄糖氧化酶、卵磷酰乙醇胺、纳米硒、维生素E、茶多酚、番茄红素、卡诺醇、绿原酸、植酸,得油脂改良剂;
S2:将搅拌罐抽真空至10-60Pa,加入羊油,加热至50-60℃,恒温搅拌至其完全熔化,再依次加入花生油、大豆油、山茶籽油、核桃油、葡萄籽油、阿甘油、火麻油、米糠油,继续升温至100-120℃,再以1-2MPa压力、500rpm转速搅拌至各成分完全互溶时,得复合油脂;
S3:待复合油脂降至室温后,加入油脂改良剂,以4-6MPa压力、1500rpm转速搅拌至油滴透亮澄清、无悬浮微粒后,即得所述食用油。本发明的有益效果:
本发明通过多种精炼植物油和羊油的合理组配适量提高饱和脂肪酸的占比,改善脂肪酸结构,使食用油的热稳定性和抗氧化性的增强,并利用油脂改良剂防止食用油高温褐变现象,降低食用油中溶解氧的含量,并增强其抗氧化性,提高食用油的风味和营养价值,其中,葡萄糖氧化酶可消耗食用油中溶解氧和少量葡萄糖,保护食用油中ω-3、ω-6、ω-9系列不饱和脂肪酸成分,并阻止了美拉德反应和焦糖化反应的发生,同时,反应产物葡萄糖内酯作为优质色素稳定剂,改善食用油色泽和品质,以卵磷酰乙醇胺作为抗氧化增效剂和油脂乳化剂,有效清除氧自由基,减少脂质过氧化物的形成,提高人体对脂肪酸的代谢能力,预防心血管疾病的发生,并以纳米硒、维生素E、茶多酚、番茄红素、卡诺醇、绿原酸、植酸复配的高活性成分进一步强化食用油的抗氧化性能和化学稳定性。

S2:将搅拌罐抽真空至10Pa,加入羊油,加热至50℃,恒温搅拌至其完全熔化,再依次加入花生油、大豆油、山茶籽油、核桃油、葡萄籽油、阿甘油、火麻油、米糠油,继续升温至100℃,再以1MPa压力、500rpm转速搅拌至各成分完全互溶时,得复合油脂;
S3:待复合油脂降至室温后,加入油脂改良剂,以4MPa压力、1500rpm转速搅拌至油滴透亮澄清、无悬浮微粒后,即得所述食用油。
实施例2
一种食用油,包括以下重量份原料:花生油55份、大豆油35份、山茶籽油18份、核桃油13份、葡萄籽油11份、阿甘油9份、火麻油7份、米糠油6份、羊油12份、油脂改良剂0.2份;
其中,油脂改良剂包括以下重量比组分:葡萄糖氧化酶36%、卵磷酰乙醇胺25%、纳米硒12%、维生素E2.5%、茶多酚1.5%、番茄红素6%、卡诺醇5%、绿原酸3%、植酸9%。
调配工艺同实施例1,区别在于:
S1:温度为28℃;S2:抽真空至35Pa,加热至55℃,升温至110℃,搅拌压力为1.5MPa;S3:搅拌压力为5MPa。
实施例3
一种食用油,包括以下重量份原料:花生油60份、大豆油40份、山茶籽油20份、核桃油15份、葡萄籽油12份、阿甘油10份、火麻油8份、米糠油7份、羊油14份、油脂改良剂0.3份;
其中,油脂改良剂包括以下重量比组分:葡萄糖氧化酶23%、卵磷酰乙醇胺30%、纳米硒15%、维生素E3%、茶多酚2%、番茄红素7%、卡诺醇6%、绿原酸4%、植酸10%。
调配工艺同实施例1,区别在于:
S1:温度为30℃;S2:抽真空至60Pa,加热至60℃,升温至120℃,搅拌压力为2MPa;S3:搅拌压力为6MPa。
分别对实施例1-3调配出的食用油进行理化性质检测,结果如下表所示:
由上表可知,本发明调配出的食用油脂肪酸结构科学合理,易于人体吸收利用,且具有较强热稳定性和抗氧化性,在加热或高温条件下,无明显褐变现象,呈色淡黄透明。
尽管本发明的实施方案已公开如上,但其并不仅仅限于说明书和实施方式中所列运用,它完全可以被适用于各种适合本发明的领域,对于熟悉本领域的人员而言,可容易地实现另外的修改,因此在不背离权利要求及等同范围所限定的一般概念下,本发明并不限于特定的细节。
Claims (4)
1.一种食用油,其特征在于,包括以下重量份原料:花生油50-60份、大豆油30-40份、山茶籽油16-20份、核桃油11-15份、葡萄籽油10-12份、阿甘油8-10份、火麻油6-8份、米糠油5-7份、羊油10-14份、油脂改良剂0.1-0.3份;
其中,油脂改良剂包括以下重量比组分:葡萄糖氧化酶23-49%、卵磷酰乙醇胺20-30%、纳米硒9-15%、维生素E2-3%、茶多酚1-2%、番茄红素5-7%、卡诺醇4-6%、绿原酸2-4%、植酸8-10%。
2.根据权利要求1所述一种食用油,其特征在于,所述食用油包括以下重量份原料:花生油55份、大豆油35份、山茶籽油18份、核桃油13份、葡萄籽油11份、阿甘油9份、火麻油7份、米糠油6份、羊油12份、油脂改良剂0.2份。
3.根据权利要求1或2任意所述一种食用油,其特征在于,所述油脂改良剂包括以下重量比组分:葡萄糖氧化酶36%、卵磷酰乙醇胺25%、纳米硒12%、维生素E2.5%、茶多酚1.5%、番茄红素6%、卡诺醇5%、绿原酸3%、植酸9%。
4.如权利要求1-3任一项所述一种食用油的调配工艺,其特征在于,包括以下步骤:
S1:在25-30℃氮气条件下,按重量份混合葡萄糖氧化酶、卵磷酰乙醇胺、纳米硒、维生素E、茶多酚、番茄红素、卡诺醇、绿原酸、植酸,得油脂改良剂;
S2:将搅拌罐抽真空至10-60Pa,加入羊油,加热至50-60℃,恒温搅拌至其完全熔化,再依次加入花生油、大豆油、山茶籽油、核桃油、葡萄籽油、阿甘油、火麻油、米糠油,继续升温至100-120℃,再以1-2MPa压力、500rpm转速搅拌至各成分完全互溶时,得复合油脂;
S3:待复合油脂降至室温后,加入油脂改良剂,以4-6MPa压力、1500rpm转速搅拌至油滴透亮澄清、无悬浮微粒后,即得所述食用油。
