Description

The present invention relates to a bread dough manufacturing method in which bread dough is kneaded so that, for example, the face of an animal panda appears on the cut surface even if any part in the longitudinal direction of the bowl is cut into a longitudinal section, such as Kintarou, for example In particular, the present invention relates to a bread dough manufacturing method in which bread dough is kneaded so that, for example, a panda's face appears on the cut surface even if any part in the longitudinal direction is cut into a longitudinal section.

2. Description of the Related Art Conventionally, a bread dough structure and a bread dough manufacturing method in which a visually distinctive pattern appears on a cross section when cut has been developed (Japanese Patent Laid-Open Nos. 2006-180821 and 2010-124812).

Here, in the conventional bread dough structure and bread dough manufacturing method, as a method of creating a pattern appearing on the cut surface, first, two kinds of bread dough having different colors are used, and the two colors of bread dough are twisted or rolled up. There was a way to mix. However, since there is only a method of twisting, rolling up, and mixing two colors of bread dough, the cross-sectional patterns that can be expressed by them are only geometric patterns such as spiral patterns and marble patterns.

特開2006−180821号公報JP 2006-180821 A 特開2010−124812号公報JP 2010-124812 A

However, in the conventional bread dough manufacturing method, even though a geometric pattern can be expressed, a more complicated character such as an animal or a person cannot be expressed in the cross section of Kintaro.

Here, the news that pandas that had been absent for many years at famous zoos in Japan were visited and raised. Originally panda is an animal popular among a wide range of ages including children, but it is expected that panda will become even more popular with this news.

So far, there are sweet breads that imitate the face of animals such as pandas, but there are no products that have a panda face appearing on the cut surface of bread.

Moreover, as already mentioned, in the conventional bread dough manufacturing method, like Kintaro, the panda face appears on the cut surface even if any part in the longitudinal direction of the bread is cut. Could not be realized.

Thus, the present invention has been devised to address the above-described conventional problems. For example, as in Kintaro, any part in the longitudinal direction of the heel can be cut into a vertical cross-section, For example, the bread dough is laid out and kneaded and shaped so that the face of an animal panda appears, so that the portion of the bread in the longitudinal direction is cut after baking. However, the purpose is to provide a bread in which, for example, the face of an animal panda appears on the cut surface.

Hereinafter, the present invention will be described based on embodiments shown in the drawings.

In the present invention, for example, when the baked bread is cut into a longitudinal section, the panda's face pattern appears on the cut surface, and is cut into a longitudinal section from any location in the longitudinal direction of the bread. In addition, the composition of the bread dough before baking was created so that the face pattern of the panda of the same layout appears. Specifically, while calculating and laying out the bread dough of various colors in advance, for example, a molding case for bread It is laid and combined in 1 and pressed to make an integral dough.

First, a bread dough for the eyes, ears, and nose, which are constituent parts of the panda's face, that is, black bread dough 2 is prepared so that these can be expressed with emphasis. In addition, although it is not limited to black bread dough, it is preferable that it is as dark as possible.

Next, the constituent parts of the face other than the eye part, the ear part, and the nose part that occupy most of the face of the panda are set as the white part, and that part, that is, white bread dough 3 is prepared. The white dough is also not limited to white, but is preferably a relatively bright color.

Further, the component that fills the gap between the ears of the panda's face is brown, and the brown bread dough 4 for that portion is prepared. This is not limited to brown, but must be a color that can be distinguished from the black bread dough.

Here, the white bread dough 3 that forms the constituent parts of the face other than the eye part, ear part, and nose part that occupies most of the face of the panda is a strong powder, top white sugar, salt, for frozen dough Mix with improver, unsalted butter, yeast, frozen whole egg, low-fat milk, condensed milk, etc.

Next, the black bread dough 2 that forms the part of the panda's face, the eye part, the ear part, the nose part is a strong powder, white sugar, salt, frozen dough improver, unsalted butter, yeast, Mix with frozen whole egg, low-fat milk, condensed milk, cocoa powder, etc. Here, the blending ratio of the cocoa powder is about 4% with respect to 100% of the strong powder.

In addition, the brown bread dough 4 that fills the gap between the ears of the panda's face is brown, and the brown bread dough 4 of that part is strong powder, white sugar, salt, frozen dough improver, unsalted butter, Mix with yeast, frozen whole egg, low-fat milk, condensed milk, cocoa powder, etc. Here, the blending ratio of the cocoa powder is about 1% with respect to 100% of the strong powder. As a result, the color is slightly lightened and brown.

As described above, the bread dough for each face color is prepared. And each bread dough is divided | segmented and it is made into the bowl shape which makes a substantially cylindrical shape. These are the dough parts that make the dough that can produce the so-called Kintaro-like bread.

For example, the black bread dough 2 is formed by dividing two 60 g doughs and 10 g dough into one (see FIG. 1).

The brown bread dough 4 is divided into a 60-g dough and a 40-g dough into one bowl (see FIG. 1).

Further, the white bread dough 2 is divided into two 50 g doughs, three 30 g doughs, and one 20 g dough (see FIG. 1).

And then, when the bread is cut using the bread dough related to the various panda face parts created above, the bread dough is arranged and laid and integrated so that the face of the panda appears on the cut surface. The process will be described.

First, a peeling sheet 5 is set in a molding case 1 for bread (see FIG. 2). In addition, although the magnitude | size of the shaping | molding case 1 for the said bread is not limited at all, In the present Example, the small thing of length 19cm, width 95cm, and height 95cm is used.

Then, about 50 g of the white bread dough 3 is formed into a 18 × 8 cm rectangle, and spread over the bottom of the bread-bread molding case 1 on which the release sheet 5 is set (see FIG. 3).

Next, 10 g of the black bread dough 2 is stretched to 18 cm and placed in the center of the white bread dough 3 in the state shown in FIG. 3 (see FIG. 4). Thereafter, 30 g of the white bread dough 3 is stretched to 18 cm in length and 3 cm in width, and placed on the black bread dough 2 placed in the center as shown in FIG. 4 (see FIG. 5).

Furthermore, about black bread dough 2, 60 g is extended to 36 cm, and it divides into 2 equal parts. Then, press the two black bread doughs 2 and 2 to a thickness of 2 cm. These two black bread doughs 2 and 2 are arranged 1 cm apart from each other, that is, on both sides in the width direction of the white bread dough 3 covering the black bread dough 2 having a rod shape arranged at the center position in the width direction (see FIG. 6).

Next, about 20 g of the white bread dough 3 is stretched to 18 cm and placed on the white bread dough 3 covered with the black bread dough 2 having a rod shape arranged at the central position in the width direction (see FIG. 7).
Thereafter, 30 g of the white bread dough 3 is stretched to 18 cm, and placed on both upper sides of the dough group laid on the molding case 1 shown in FIG. 7 (see FIG. 8).

Further, 50 g of white bread dough 3 is formed into a rectangle 18 cm long and 8 cm wide and placed on the bread dough group laid in the state shown in FIG. 8 (see FIG. 9).

Next, about black bread dough 2, 60 g is extended to 36 cm and divided into 2 equal parts. Then, the two black bread doughs 2 are pressed down to a thickness of about 2 cm. This was placed on both sides of the bread dough group laid out in the state of FIG. 9 (see FIG. 10), and for brown bread dough 4, 40 g of the bread dough was extended to 18 cm in length and 4 cm in width, and both sides shown in FIG. (See Fig. 11).

Thereafter, 60 g of brown bread dough 4 is formed into a rectangle 18 cm long and 8 cm wide and placed on the bread dough group laid in the state shown in FIG. 11 (see FIG. 12).

Finally, the dough group that has been spread and overlapped as shown in FIG. 12 is taken out of the molding case 1 and frozen in that state so that it can be stored.
Note that the panda's face in this state has a height of about one-third of that at the time of completion (see FIG. 13).

When baking, the frozen dough shown in FIG. 13 is thawed and baked at a predetermined temperature for a predetermined time. Then, the frozen dough expands in the baking case and is baked so that the cut surface has a substantially square shape.

Even if this baked bread is cut from any part in the longitudinal direction, as can be understood from FIG. 14, no matter which part of the bread in the longitudinal direction is cut, the panda shown in FIG. A face pattern will appear.
