Abstract
【解決手段】馬鈴薯デンプンをはじめとする天然デンプンを原料デンプンとし、これを主としてα−アミラーゼ等により分解して、分子量分散度{重量平均分子量(Mw)/数平均分子量(Mn)}を200〜3000とし、かつ、デキストロース当量(DE)を0.5〜5.5として制御することにより得る。

Description
数平均分子量(Mn)、重量平均分子量(Mw)、Z平均分子量(Mz)、及び分子量分散度(Mw/Mn)の測定に当たり、HPLCによるゲル濾過クロマトグラフ法とした。同装置の示差屈折検出器は株式会社島津製作所製:RID−10A、ポンプは株式会社島津製作所製:LC−10ADvp、カラムオーブンは株式会社島津製作所製:CTO−10ASvp、カラムは昭和電工株式会社製:KS−804(8×300mm)とした。
実施例並びに比較例の水溶物のゲル強度については、溶解した試料をJIS−K−6503(2001)に準拠し、ゼリー強度として測定、評価した。溶解は25℃の水を用い、主に25w%の固形分濃度(w/v)に揃えてデンプン分解物の試料を塊にしないようにかき混ぜながら溶かした。溶解後、10℃に冷却し静置した。ゼリー強度の物性測定装置には、株式会社サン科学製:レオメーターCOMPAC−100IIを用いた。
DEについては、還元糖の定量法として一般的であるベルトラン法に従い、実施例並びに比較例のデンプン分解物を測定した。
市販の馬鈴薯デンプン(実施例1,3,5)、コーンスターチ(実施例2及び比較例6)、甘藷デンプン(実施例4)に対し、耐熱性α−アミラーゼ(大和化成株式会社製:クライスターゼT−5)を添加し、ミニクッカー(ノリタケエンジニアリング株式会社製)を用いて酵素処理により液化した。これらの液化物をスプレードライヤにより噴霧乾燥し、実施例(実施例1ないし5)並びに比較例6のデンプン分解物を得た。
なお、ゼリー強度の数値と官能による評価は、概ね以下の感触、弾力等と対応する。
ゼリー強度300〜2000は、歯ごたえのある型抜きゼリー様である。
ゼリー強度100〜300は、軟らかい舌触りのカップゼリー様である。
ゼリー強度10〜100は、スムースに流動するプリン様である。
ゼリー強度0〜100は、流動性が非常に高いヨーグルト様である。
ゼリー強度0とは、水溶したものの液状のままである。
Claims (3)
- 原料デンプンを分解して、分子量分散度(重量平均分子量/数平均分子量)を200〜3000とし、かつ、デキストロース当量(DE)を0.5〜5.5としたことを特徴とする易ゲル化デンプン部分分解物。
- 前記原料デンプンが天然デンプンである請求項1に記載の易ゲル化デンプン部分分解物。
- 前記原料デンプンが馬鈴薯デンプンである請求項1に記載の易ゲル化デンプン部分分解物。
