Abstract

Gluconic acid monohydrate is obtained by agitating a gluconic acid solution (i.e. a solution in water of gluconic acid and its lactones whether or not in equilibrium) containing more than 40 and not more than 70% by weight of the acid as C6H12O7 at a temperature of not more than 30 DEG C. in the presence of inoculating crystals of the monohydrate. A small amount of a strong inorganic acid may be present. U.S.A. Specification 1,942,660 also is referred to.
