Abstract
In purifying sugar-containing juice the juice is pre-limed in three stages, namely, an acid stage, a neutral stage and an alkaline stage during which alkaline stage, lime and carbon dioxide are introduced to bring the pH up to an optimum value of about 11 and ensure that the concentration of the resulting calcium carbonate increases with rising pH value, and some of the juice is returned from stages of relatively high lime or lime and calcium carbonate concentration to stages of relatively low concentration. After each introduction of lime or lime and carbon dioxide, the juice may be allowed to stand untouched for a stabilizing period. The lime may be supplied in the form of limed defecation juice moving in counter-flow to the juice undergoing pre-liming.
