Abstract

Liquid or semi-solid foods, particularly dairy products such as milk, are preserved by sealing with an equal volume of oxygen and raising the temperature to at least 68 DEG C. while agitating the food for half an hour. The food is placed in a pressure container sealable by a gas-tight valve, enclosed in an atmosphere of oxygen at a pressure of at least four atmospheres, the temperature is raised and the food agitated, and thereafter the pressure of oxygen in the container is maintained at a minimum of 4 atmospheres until the food is required.
