654,468. Heating food in cans. CONTINENTAL CAN CO., Inc. Feb. 27. 1948. No. 6024. Convention date, Nov. 18, 1946. [Class 49] For accelerating heat transfer to and from a sealed can of food which contains liquid and has a space e permitting movement of the contents, the can is rotated, end over end, about a horizontal axis externally of the can at a speed sufficiently great that the variation in magnitude and direction of the resultant of the centrifugal and gravitational forces causes turbulence and circulation of the can contents. The centrifugal force exerted by the mobile contents of the can is preferably between and 1¢ times the gravitational force on the contents. In Fig. 5 are shown eight successive positions of a can c and the head space h therein when the can is so moving about a horizontal axis A which is a can length from the inner end of the can, the arrows w indicating gravity. A table sets out times of attaining sterilizing temperature by the method, in comparison with methods whereby the cans remain stationary or are rolled or shaken, for cans of stated sizes containing evaporated milk, whole kernel corn in brine, spinach, asparagus spears, and cabbage.
