Abstract

Vegetables and fruits of dry matter content less than 20 per cent. when fresh, e.g., spinach, white cabbage and carrots, sub-divided or whole, are dried to a particular dry matter content within the range 75-90 per cent. and compressed at a particular pressure of between 250 and 1,000 kg./cm.2 to briquettes having S.G. not less than 1.1 and preferably greater than 1.2, the required dry matter content relative to the pressure employed being determined by tests in accordance with those for spinach as follows. Batches of medium-grained spinach freed from coarser ribs were dried to 74, 77, 84, 89 and 93 per cent. dry matter and compressed into flat briquettes having a rectangular base 65mm.x125mm. under pressure of 250, 500 and 1,000 kg./cm.2. The S.G. of the resulting briquettes, calculated upon measurement of their thicknesses 48 hours after release of the pressure, indicated that for 250, 500 and 1,000 kg./cm.2 pressures, the respective optimum contents of dry matter were 77 per cent., 84-86 per cent., and 86-89 per cent., the respective S.G. being 1.12, 1.17 and 1.21.
