Abstract
In a meat or fish roll, which is composed of one or more portions of coarsely-chopped or sliced meat or fish and one or more portions of meat or fish paste so arranged that the proportions are the same or approximately the same in any transverse slice and which is heat-processed and sealed in a container, the paste and the chopped or sliced material are separated by a layer of dough which is cooked during the processing. The dough may be coloured and seasoned. The chopped or sliced material and the paste may be mixed with gelatine, egg, tomato, spices, flavourings or condiments, and the paste preferably also contains a diluent such as bread or soya meal.
