Abstract
546,207. Desalting fish; disinfectants &c. STOCKHAMER, P. Dec. 31, 1940, No. 18262. [Classes 49 and 81 (i)] The fish is treated with an aqueous solution containing at least one preservative salt in the form of a sulphite, sodium carbonate and/or bicarbonate, a small amount of pepsin and/or papain, and, optionally, a mould-inhibitor such as p-hydroxybenzoic acid or its sodium salt. The pepsin or papain loosens the connective tissue of the fish and enables the solution to enter the tissue more freely. The sulphite salt may be a bisulphite, hydrosulphite, metabisulphite, or ordinary sulphite. The ingredients of the solution may be made into tablets. The desalting may be applied to fish salted by the process described in Specification 546,214.
