Abstract
1523250 Accelerated fermentation of lagertype beer MILLER BREWING CO 14 June 1977 [14 Dec 1976] 24796/77 Heading C6E A method of producing a lager beer by bottom fermentation in a shorter time than would ordinarily be required involves the steps of conducting the fermentation at an elevated temperature of 60 to 85‹F while maintaining the dissolved CO 2 concentration in the fermentation liquer at 1À5 to 2À0 cc. per cc. of fermentation liquer by use of a CO 2 over pressure of 2 to 20 psig. A working Example is given. In certain comparative examples the operating conditions differed slightly from those defined above.
