[Also in Division A2] In an apparatus for cooking food contained in wide mouth glass jars, the contents of the jars are cooked by passing the jars through streams of cascading water at the cooking temperature while subjecting the external surface of the jars to a pressurized gaseous fluid during said cooking, such gaseous fluid being maintained at a pressure sufficient to completely or partially balance the internal pressure of the jars. Glass jars C are loaded at a station F on to carrier bars 20 of a chain conveyer 18 and transported via an inlet leg 12 of an hydrostatic cooker 10 into a central cooking chamber 16 in which heated water is cascaded on to the jars C from troughs 84 fed, via conduits 82 and a manifold 80, by a pump 78. Steam is injected into the cooking chamber 16 by a conduit 92 and into the cooker water by nozzles 108, in response to the actuation of valves 90, 100 by temperature sensing devices 94, 104 respectively, The gaseous pressure within the chamber 16 is maintained by compressed air fed into the top of it by a conduit 68, in response to the actuation of a valve 70 by a pressure detecting device 74. The jars C are discharged, via an hydrostatic outlet leg 14, at a discharge station D.
