Abstract

Nucleic acids are extd. from yeasts intended for human consumption by acid hydrolysis, the improvement comprising using a cells/HCl soln. ratio of about 1:1. The process consists in introducing the unpressed, hydrocarbon-washed moist yeast cell paste into a vessel, injecting steam at the vessel base, extruding with stirring, via the base, the fluidised paste into an acidification chamber, stirring being effected with a helical stirrer, injecting the HCl soln. pref. at a concn. of 0.15N-1N into the acidification chamber and kneading the paste with twin helical stirrers dispersed axially vertically relative to the first helical stirrer, extruding the paste into an incubation chamber kept at 100 degrees C extruding into a washing tank, recovering the hydrolysed cellular paste and weighing and finally recovering the washing soln. and hydrolysate concentrate. The process ensures complete hydrolysis of the nucleii acids which if present in the yeast for eventual consumption would give rise to formation of uric acid.
