Abstract

A souffle which can be frozen and stored after it has been cooked conforms to the following conditions taken separately or together (a) the souffle should contain equal amts. of egg yolk and white, (b) the total amt. of eggs used should be >=3 that normally used, (c) the egg whites should not be completely cooled before the first cooking of the souffle and (d) the sugar used should be used half in the souffle mix and half in the stiffly beaten egg whites. The souffles may be kept frozen for several months after mfre. and are esp. useful for restaurants and shops.
