Ansprüche
1. Unmodifiziertes pilzliches Triglyceridöl, umfassend mindestens etwa 40% Arachidonsäure (ARA) in dem Triglycerid und nicht mehr als ein Zehntel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA).
2. Unmodifiziertes pilzliches Triglyceridöl gemäß Anspruch 1, wobei das Öl mindestens 40% Arachidonsäure (ARA) in dem Triglycerid und im wesentlichen keine Eicosapentaensäure (EPA) umfaßt.
3. Unmodifiziertes pilzliches Triglyceridöl nach Anspruch 1 oder 2, wobei das Öl mindestens 50% Arachidonsäure (ARA) enthält.
4. Öl gemäß einem der Ansprüche 1 bis 3, wobei der Pilz eine Mortierella Spezies ist.
5. Öl nach Anspruch 4, wobei der Pilz Mortierella alpina ist.
6. Verfahren zur Herstellung eines Arachidonsäure enthaltenden Öls, wobei das Öl Triglyceride enthält, wobei mindestens 25% der Fettsäurereste Arachidonsäure (ARA) sind und die Menge der Eicosapentaensäure (EPA)-Reste in dem Öl nicht mehr als Fünftel der Menge an Arachidonsäure (ARA)-Reste beträgt, umfassend
(a) das Züchten von Mortierella Species in einem belüfteten Fermentator, der ein Kulturmedium enthält, wobei eine Kohlenstoffquelle in einer Menge, die mindestens 80 g/l Glucose entspricht, und eine Stickstoffquelle in einer Menge, die mindestens 15 g/l Hefeextrakt
entspricht, in das Kulturmedium im Zuge der Fermentierung zu-

gegeben werden,
(b) das Beibehalten des pH-Werts zwischen 5 und 6 am Beginn der Züchtung,
(c) das Beibehalten des pHs zwischen 7 und 7,5 am Ende der Züchtung,
(d) das Ernten der Biomasse aus dem Fermentator und Rückgewinnen des Arachidonsäure enthaltenden Öls von der Biomasse.
7. Verfahren nach Anspruch 6, wobei der Gehalt an gelöstem Sauerstoff in dem Kulturmedium mindestens 35% des Luftsättigungsgehalts beträgt.
8. Verfahren nach Anspruch 6, wobei die Stickstoffquelle in zwei oder mehrere, gleiche Teilmengen geteilt wird, welche in den Fermentator zu verschiedenen Zeiten eingespeist werden, wobei mindestens eine Teilmenge in den Fermentator bei einer Zeit eingespeist wird, die von der Zeit unterschiedlich ist, bei welcher die Kohlenstoffquelle in den Fermentator gebracht wird.
9. Verfahren nach einem der Ansprüche 6 bis 8, wobei die Mortierella Species Mortierella alpina ist.
10. Verfahren nach einem der Ansprüche 6 bis 9, wobei weiter rohes Arachidonsäure enthaltendes Öl aus der Biomasse durch Extraktion mit einem nicht-polaren Lösungsmittel rückgewonnen wird und das rohe Öl durch Extraktion mit einem polaren organischen Lösungsmittel gereinigt wird.
11. Verfahren nach Anspruch 10, wobei das nicht-polare Lösungsmittel Hexan ist.
12. Verfahren nach Anspruch 10, wobei das polare Lösungsmittel ausgewählt ist aus der Gruppe, bestehend aus Aceton, Ethanol und Isopropylalkohol.
13. Verfahren zum Versorgen von Säuglingsnahrung mit Triglycerid, das Arachi-

donsäure (ARA) enthält, welches das Zugeben eines unmodifizierten pilzlichen Triglyceridöls, das mindestens 40% Arachidonsäure (ARA) und nicht mehr als ein Fünftel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA) umfaßt, zu einer Säuglingsnahrung in einer Menge umfaßt, die ausreichend ist, einen Arachidonsäure (ARA)-Gehaltbereitzustellen, welcher der Menge an Arachidonsäure (ARA) in menschlicher Muttermilch entspricht.
14. Verfahren nach Anspruch 13, wobei das Öl mittels einer Mortierella Spezies hergestellt wird.
15. Verfahren nach Anspruch 14, wobei das Öl mittels Mortierella alpina hergestellt wird.
16. Verfahren nach einem der Ansprüche 13 bis 15, wobei das Öl nicht mehr als ein Zehntel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA) umfaßt.
17. Verfahren nach einem der Ansprüche 13 bis 16, wobei das Öl im wesentlichen keine Eicosapentaensäure (EPA) umfaßt.
18. Verfahren nach einem der Ansprüche 13 bis 17, wobei das Öl 50% Arachidonsäure (ARA) umfaßt.
19. Säuglingsnahrung, umfassend Triglycerid, das Arachidonsäure (ARA) in einer Menge enthält, die der Menge in menschlicher Muttermilch vergleichbar ist, wobei der Säuglingsnahrung die Arachidonsäure (ARA) durch Zugeben einer ausreichenden Menge eines unmodifizierten pilzlichen Öls zugeführt wird, welches Triglycerid umfaßt, das mindestens 40% Arachidonsäure (ARA) und nicht mehr als ein Fünftel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA) enthält.

21. Säuglingsnahrung gemäß Anspruch 20, wobei das pilzliche Öl im wesentlichen frei von Eicosapentaensäure (EPA) ist.
22. Säuglingsnahrung gemäß einem der Ansprüche 19 bis 21, wobei das unmodifizierte pilzliche Öl Triglycerid umfaßt, das mindestens 50% Arachidonsäure (ARA) enthält.
23. Verfahren zum Versorgen eines Menschen mit zusätzlicher Arachidonsäure (ARA), welches das Verabreichen einem Menschen mit Bedarf an zusätzlicher Arachidonsäure (ARA) einer Zusammensetzung umfaßt, die unmodifiziertes pilzliches Öl, enthaltend Arachidonsäure (ARA) in Form von Triglycerid, enthält, wobei das Öl mindestens 40% Arachidonsäure (ARA) und nicht mehr als ein Fünftel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA) enthält und wobei das Öl in einer Menge vorliegt, die wirksam ist, einen Menschen zusätzlich mit Arachidonsäure (ARA) zu versorgen.
24. Verfahren nach Anspruch 23, wobei das Öl mindestens 50% Arachidonsäure (ARA) enthält.
25. Verfahren nach Anspruch 23 oder 24, wobei die Zusammensetzung einem Menschen in einer Menge verabreicht wird, die 0,2-0,8 g Arachidonsäure (ARA)/Tag liefert.
26. Verfahren nach einem der Ansprüche 23 bis 25, wobei die Zusammensetzung enteral verabreicht wird.
27. Verfahren nach einem der Ansprüche 23 bis 25, wobei die Zusammensetzung parenteral verabreicht wird.
28. Verfahren nach einem der Ansprüche 23 bis 25, wobei die Zusammenset-
zung topisch verabreicht wird.
29. Verfahren nach einem der Ansprüche 23 bis 25, wobei der Mensch eine schwangere oder eine stillende Frau ist.
30. Verfahren nach einem der Ansprüche 23 bis 25, wobei der Mensch, der Bedarf an zusätzlicher Arachidonsäure (ARA) hat, an einer neurologischen Störung leidet.
31. Verfahren nach Anspruch 30, wobei die neurologische Störung ein dystones Syndrom, Schizophrenie oder einer peroxisomale Störung ist.
32. Verfahren nach einem der Ansprüche 23 bis 25, wobei der Mensch, der Bedarf an zusätzlicher Arachidonsäure (ARA) hat, an einem Krankheitszustand leidet, der mit vermindertem Serumgehalt an Arachidonsäure (ARA) verbunden ist.
33. Verfahren nach Anspruch 32, wobei die Krankheit eine Leberkrankheit, Phenylketonurie oder Mukoviszidose ist.
34. Kosmetische Zusammensetzung, umfassend unmodifiziertes pilzliches Öl, das Arachidonsäure (ARA) in Form von Triglycerid enthält, wobei das Öl mindestens 40% Arachidonsäure (ARA) und nicht mehr als ein Fünftel soviel Eicosapentaensäure (EPA) wie Arachidonsäure (ARA) enthält, wobei das Öl in der Zusammensetzung in einer Menge vorliegt, die wirksam ist mitzuhelfen, den Hautton beizubehalten, wenn die Zusammensetzung topisch aufgetragen wird.
35. Zusammensetzung nach Anspruch 34, wobei das Öl mindestens 50% Arachidonsäure (ARA) enthält.
