Description
Verfahren zur Herstellung eines alkoholhaltigen Mischgetränkes Die Erfindung bezieht sich auf ein Verfahren zur Herstellung eines alkoholhaltigen Mischgetränkes aus Bier und Wein. Es ist bekannt, aus Pilsenern Bier im Verschnitt mit Sekt ein Mischgetränk herzustellen. Unmittelbar vor dem Trinken werden die Getränkebestandteile gemischt, indem dem Bier ein geringerer Anteil Sekt zugegeben wird. Es handelt sich hierbei um eine mechanische Vermischung der Getränkebestandteile. Weiter ist ein Verfahren bekannt, nach welchem durch eine einzige Gärung ein alkoholisches Getränk aus einem Gemisch von gehopfter Bierwürze und Traubenmost erzeugt wird. Bei Verschnitten von Traubenmostgärungen mit Kombuchagärungen handelt es sich bei der Kombucha um ein Gemisch von in Symbiose lebenden Gärungsorganismen. Das läßt die Vermutung zu, daß das nach diesem bekannten Verfahren hergestellte Getränk ein Kriegsbier ist, für das neben Malz Traubenmost verarbeitet wurde. Ein weiteres bekanntes Mischgetränk besteht aus vergorener gehopfter Bierwürze und Fruchtextrakten. Es ist mittels Weinhefe nochmals vergoren. Dem Getränk liegt damit eine Mischungsgärung eines vergorenen und nicht vorvergorenen Bestandteiles zugrunde.Process for the production of an alcohol-containing mixed beverage The invention relates to a method for producing an alcohol-containing mixed drink made of beer and wine. Die Erfindung hat demgegenüber ein Verfahren zur Herstellung eines Mischgetränkes zum Gegenstand, das dadurch gekennzeichnet ist, daß eine Mischung von Bier und Wein mit einem größeren Anteil Bier und einem kleineren Anteil Wein je nach Extraktgehalt hergestellt und diese Mischung einer gemeinsamen alkoholischen Vergärung unterworfen wird. Vorzugsweise betragen die Mischungsanteile zwei Drittel Bier und ein Drittel Wein. Durch den Erfindungsvorschlag werden die bereits jeweils für sich einer Gärung unterlegenen Mischungskomponenten einer erneuten Gärung, d. h. einer Mischgärung, unterworfen. Es gelingt durch diese, die an sich in ihrem Charakter völlig verschiedenen Mischungskomponenten harmonisch aufeinander abzustimmen, ohne daß eine ihrer Eigenschaften störend hervortritt. Das Getränk erhält eine feine, rasch abgleitende Hopfenbittere, die leicht an Bier erinnert. Außerdem verleiht der Schaum dem Getränk eine gewisse bierige Note, während der sektähnliche Charakter im Weinbukett sowie in dem hohen KohlensäuregeÜalt deutlich zum Ausdruck kommt. Der technische Fortschritt beruht darauf, daß das Getränk nicht nur qualitativ, sondern auch quantitativ in einem festgelegten Verschnitt von Bier und Wein als gleichmäßiges Erzeugnis herzustellen und durch seine Abfüllung in Flaschen überhaupt marktfähig ist.In contrast, the invention relates to a method for producing a mixed drink, which is characterized in that a mixture of beer and wine is produced with a larger proportion of beer and a smaller proportion of wine, depending on the extract content, and this mixture is subjected to joint alcoholic fermentation.
