背景技术
目前,豆奶已成为多数人日常生活中不可缺少的饮料,豆奶含有丰富的优质蛋白质及多种人体所需的微量元素,其营养价值与牛奶相近,并且豆奶中的蛋白为优质植物蛋白,豆奶还富含钙、磷、铁等矿物质,铁的含量是牛奶的二十五倍,豆奶中不含胆固醇与乳糖,豆奶中所含的丰富的不饱和脂肪酸、大豆皂甙、异黄酮、卵磷脂等几十种对人体有益的物质,具有降低人体胆固醇、防止高血压、冠心病、糖尿病等多种疾病的功效,还具有增强免疫、延缓肌体衰老的功能,营养学家认为胆固醇是导致心脏血管疾病的主因。
但是,豆奶里面的豆腥味影响了人们的饮用,豆腥味是由于大豆中含有的脂肪氧化酶使大豆中的油脂发生氧化降解反应而产生的,脂肪氧化酶多存在于靠近大豆表皮的子叶处,当大豆的细胞壁被破碎之后,就会遇到空气中的氧而使油脂氧化,造成豆腥味,其中,乙醛是造成豆腥味的主要成分,只要豆制品中含有极微量的几千万分之一的油脂氧化物,就能使豆制品产生豆腥味而难以饮用,而这些氧化物又和大豆中的蛋白质有亲和性,即使利用提取或洗净的方法也难以去除,目前,常用的消除豆制品中豆腥味的主要方法有以下几种:
a.微波处理法,
b.加酶处理法,
c.矿物质发酵处理法,
d.加入抗氧化剂法,
e.单因素酶法处理法,
f.溶剂溶出法,以上几种处理方法均不能产生明显的效果。
为克服现有情况下,豆奶里面的豆腥味影响了人们的饮用,豆腥味是由于大豆中含有的脂肪氧化酶使大豆中的油脂发生氧化降解反应而产生的,脂肪氧化酶多存在于靠近大豆表皮的子叶处,当大豆的细胞壁被破碎之后,就会遇到空气中的氧而使油脂氧化,造成豆腥味,其中,乙醛是造成豆腥味的主要成分,只要豆制品中含有极微量的几千万分之一的油脂氧化物,就能使豆制品产生豆腥味而难以饮用,而这些氧化物又和大豆中的蛋白质有亲和性,即使利用提取或洗净的方法也难以去除,现有的消除豆腥味的方法产生的效果不明显的不足,本发明提供了一种制作无异味豆奶的装置及制备方法,该方法中采用在高温环境下对大豆进行粉碎,使大豆里面能产生豆腥味的脂肪氧化酶被破坏,能有效消除原来豆奶中出现的异味,饮用可口,味道鲜美。
本发明解决其技术问题所采用的技术方案是:安装一台电动磨,电动磨的顶部设置有进料口,电动磨的中间部分是磨室,磨室的下面是下料口,在紧贴电动磨的周围安装有加热箱,加热箱里面装有蓖麻油,加热箱底部有加热板,加热板下面设置有底座,磨室里面安装有磨盘,磨盘的中间安装有磨轴,磨轴上安装有轴承座,磨盘上面有磨牙,磨室后面安装有电机,电机的下面设置有电机底座,电机通过磨轴带动磨盘转动,工作时,接通加热板电源,加热板发热,加热板把上面加热箱里面的蓖麻油加热到300℃,由于磨室的周围被加热箱包裹,加热箱里面的高温传导到磨室里面,磨室里面也形成高温区,这时,把大豆从进料口倒进去,使大豆在高温下进行粉碎,由于高温作用,大豆里面的脂肪氧化酶被破坏,粉碎后的大豆粉末从下料口出来,然后,大豆粉末被倒进大锅内进行煮浆,煮浆后又进行过滤,把浆甩干后,倒进大桶内,用蒸汽吹浆,加热到100~110℃即可,浆汁煮熟后再进行1次熟浆过滤,除去杂质,然后冷却沉淀,形成豆奶,大豆经过高温环境下粉碎后,大豆里面的脂肪氧化酶大部分被破坏,消除了产生豆腥味的根源,大豆里面的豆腥味就会被消除。
豆奶经过冷却沉淀后需要再进行处理,操作如下:设置一容器,按质量份向容器内加入43份偏磷酸钠,0.5份无水吡咯啉酸钠,0.5份多磷酸钠,4份苹果酸,2份苹果酸钠,在容器内搅拌均匀,以上几种原料均为食用级别,对人体无害,然后,将容器内的物品按1%比例向豆奶中添加即可,再把冷却沉淀的豆奶注入一次性塑料杯中,封口即可。
本发明的有益效果是,能有效消除豆奶中出现的异味,使豆奶饮用可口,保证人们饮食健康。

在图3中,磨室12里面安装有磨盘3,磨盘3上面有磨牙8,磨盘3的中间安装有磨轴7。
在图4中,磨室12里面安装有磨盘3,磨盘3的中间安装有磨轴7,磨盘3上面有磨牙8,磨室12后面安装有电机9,电机9通过磨轴7带动磨盘3转动。

Claims (1)
1.一种制作无异味豆奶的装置及制备方法,其特征是:安装一台电动磨,电动磨的顶部设置有进料口,电动磨的中间部分是磨室,磨室的下面是下料口,在紧贴电动磨的周围安装有加热箱,加热箱里面装有蓖麻油,加热箱底部有加热板,加热板下面设置有底座,磨室里面安装有磨盘,磨盘的中间安装有磨轴,磨轴上面安装有轴承座,磨盘上面有磨牙,磨室后面安装有电机,电机的下面设置有电机底座,电机通过磨轴带动磨盘转动,大豆经过高温环境下粉碎后,大豆里面的脂肪氧化酶大部分被破坏,大豆里面的豆腥味就会被消除,经过煮浆冷却沉淀,形成豆奶,再设置一容器,按质量份向容器内加入43份偏磷酸钠,0.5份无水吡咯啉酸钠,0.5份多磷酸钠,4份苹果酸,2份苹果酸钠,在容器内搅拌均匀,将容器内的物品按1%比例向豆奶中添加即可。
