Description
先ず始めに、本発明の方法に用いる米油、部分脱脂米糠および白米について、それぞれ説明する。
水分:13〜15%
油分:18〜20%
固形分:65〜70%
蝋分:0.9〜1.6%
リン脂質:0.3〜0.5%
酵素:リパーゼなど
ロータリーシフター3によって、不要な異物(例えば石、砕けた米)を矢印Bのように除去する(図1に示す「異物除去処理」)。次いで、米糠を一定量ごと乾燥機5に送り、送風機4から熱風を送風して気流乾燥する。この気流乾燥によって、比較的に短時間で殺菌および乾燥を行う。乾燥後の米糠の好ましい水分量は5〜10%である。
次に、本発明の加水加熱調理方法について具体的に説明する。
次に、本発明の白米栄養付加材、および米調理セットについて説明する。
市販されている白米を450g用意し、これを研いだ後、図1から2に示した低温圧搾処理および物理精製により得られた米油6gと、部分脱脂米糠44gとを添加して、これを家庭用の炊飯器で炊いた。これを実施例1の飯(白米栄養付加材入りの白米)とする。
前記実施例1の飯を100gづつ採取し、それぞれに含まれる栄養価を調べた結果を以下の表2に示す。なお、参考例1として玄米100gに含まれる栄養価、および参考例2として白米(通常の御飯)100gに含まれる栄養価を併記する。

Claims (8)
- 100℃以上130℃以下の米糠を加圧して100℃以下の米油原油を絞り出す低温圧搾処理を行うことにより得られる米油原油を、苛性ソーダなどの薬品を用いることのない物理精製法によって精製することにより得られる米油と、
前記米油を得た後に残る、油分が12%以下の部分脱脂米糠と、を
白米と一緒に加水加熱調理することを特徴とする調理方法。 - 前記部分脱脂米糠が、乾燥した粉末状であることを特徴とする請求項1に記載の調理方法。
- 前記米油と、部分脱脂米糠と、白米との配合割合が、重量比で、1:9:90であることを特徴とする請求項1または2に記載の調理方法。
- 前記請求項1乃至3の何れか一の請求項に記載の調理方法により得られた米加工食品。
- 100℃以上130℃以下の米糠を加圧して100℃以下の米油原油を絞り出す低温圧搾処理を行うことにより得られる米油原油を、苛性ソーダなどの薬品を用いることのない物理精製法によって精製することにより得られる米油と、
前記米油を得た後に残る、油分が12%以下の部分脱脂米糠と、からなることを特徴とする白米栄養付加材。 - 前記米油と、部分脱脂米糠の配合割合が、重量比で、1:9であることを特徴とする請求項5に記載の白米栄養付加材。
- 100℃以上130℃以下の米糠を加圧して100℃以下の米油原油を絞り出す低温圧搾処理を行うことにより得られる米油原油を、苛性ソーダなどの薬品を用いることのない物理精製法によって精製することにより得られる米油と、白米とを加水加熱調理し、これに前記米油を得た後に残る、油分が12%以下の部分脱脂米糠を添加することを特徴とする米加工食品。
- 100℃以上130℃以下の米糠を加圧して100℃以下の米油原油を絞り出す低温圧搾処理を行うことにより得られる米油原油を、苛性ソーダなどの薬品を用いることのない物理精製法によって精製することにより得られる米油と、
