Abstract
本发明公开了一种凉茶及其制备方法,其中凉茶由以下重量份配比的原料制成:干茶30~50份;小叶相思藤叶9~15份;大青叶5~15份;桑叶5~10份;金银花1~3份;罗汉果3~5份;枸杞10~20份;木糖醇30~50份;水1000~2000份。本发明提供的凉茶具有清热解毒、清暑利湿、养肝护肝的功效,加入的木糖醇能够改善口感,适合于糖尿病人和肥胖症患者饮用。

技术领域
本发明涉及饮品领域,具体涉及一种凉茶及其制备方法。
背景技术
凉茶是中草药植物性饮料的通称,是指将药性寒凉和能消解人体内热的中草药煎水做饮料喝,以消除夏季人体内的暑气,或治疗冬日干燥引起的喉咙疼痛等疾患。
凉茶除了清热解毒外,还可去湿生津、清火、明目、散结、消肿,用于治辽目赤头痛、头晕耳鸣、疔疮肿毒和高血压等疾病。
暑热耗气伤津,因此凉茶中所用的药材多具有清热益气、滋阴潜阳的功效,即使凉茶中所用的药材可以当做食品食用,其仍具有中药的四气五味,比如金银花、玫瑰花、苦丁茶、菊花、佩兰、木蝴蝶、麦冬、竹叶等药材,性味大多是辛甘寒凉,经过浸泡后,有效成分会有一半以上溶解到水里,药力虽然不像煎过的汤药那么强,但是如果大量的喝,在清解暑热、滋阴潜阳的同时,也会使人体脏腑的阳气发散、受损,脾胃等器官会由于阴液的滞腻而功能失调,因此,凉茶可以在适当的时候用来解解暑,但喝的时候应该节制有度。
现有市售凉茶的种类有很多,配方也多种多样,不同的凉茶除了具有共同的清热解毒功效之外,还因成分不同,具有特殊的功效。
例如,授权公告号为CN103039669B的发明公开了一种凉茶饮料,所述的凉茶饮料以下重量份数的原料制成:浸提液A20-30份、浸提液B15-25份、浸提液C25-35份、蔗糖8-16份、柠檬酸0.02-1份、柠檬酸钠0.02-1份和水14-48份;所述的浸提液A由质量比为1:2:2:2:140的金银花、桑叶、菊花、勿忘我和水制成,浸提液B由质量比为1:2:3:90的竹叶、车前子、栀子和水制成,浸提液C由质量比为1:1:1:60的枸杞、红枣、陈皮和水制成。
又如,授权公告号为CN102813034B的发明公开了一种凉茶饮料,由以下质量百分比的原料成分制作而成:芦根浸提液10%-15%,白茅根浸提液10%-15%,蒲公英根浸提液5%-10%,竹叶浸提液10%-15%,荷叶浸提液10%-15%,金银花浸提液1%-3%,陈皮浸提液1%-3%,蔗糖4%-8%,柠檬酸0.01%-1%,柠檬酸钠0.01%-1%,水14%-48%。
以上所述凉茶的制备工艺都较为复杂,且都添加蔗糖作为调味剂,不适合糖尿病人以及肥胖症患者饮用。
发明内容
本发明提供了一种凉茶及其制备方法,以干茶、小叶相思藤叶、大青叶、桑叶、金银花、罗汉果和枸杞为主要原料,并加以木糖醇辅助调味,制成口味甘醇、清热解毒、清咽护肝的凉茶,适用于糖尿病人以及肥胖症患者饮用。
一种凉茶,由以下重量份配比的原料制成:
茶叶属于双子叶植物,茶叶中含有多种营养成分和药效成分,例如茶多酚类、植物碱、蛋白质、维生素、果胶素、多种氨基酸等,能够调节生理功能,发挥多方面的保健和药理作用。
常见的茶叶主要分为绿茶、青茶、红茶、黑茶、黄茶、白茶等几大类,茶叶经过不同的制作工艺具有凉性以及温性之分,一般而言,绿茶性味苦寒,能清热、消暑、解毒、增强肠胃功能;青茶不寒不热,能彻底消除体内余热;红茶味甘性温,含有丰富的蛋白质,具有一定的滋补功能。
茶味甘苦涩而性凉,《食疗本草》记载茶“利大肠,去热,解痰”,为了保证凉茶具有良好的清热解毒效果,优选地,本发明所述干茶为绿茶,例如,碧螺春、竹叶青、西湖龙井、黄山毛峰、信阳毛尖、太平猴魁等。
依据茶叶品种的不同,制作工艺略有区别,得到的干茶中水分含量不大于6%。
大青叶性味苦寒,主要用于热毒发斑、丹毒、咽喉肿痛、口舌生疮、疮痛肿毒、痰热郁肺、咯痰黄稠等症,《本草纲目》记载“气寒,味微苦咸”,脾胃虚寒者忌服,在凉茶中适宜少量添加大青叶,既能够达到清热的效果,又能够满足不同体质的人的需求。
相思藤叶是豆科植物相思子的茎、叶,别名土甘草、山甘草,是一味中药,有清热解毒、生津,润肺,利尿等功效,主治感冒,咽喉肿痛,肺热咳嗽,乳痈,疮疖,肝炎等。
相思藤叶,性味甘凉无毒,《生草药手册》记载,相思藤叶“生津,止渴,润肺,清热”,在凉茶中广为应用,相思藤叶中,小叶比大叶价值高,本发明中,精选小叶相思藤叶,并去掉叶茎入凉茶。
桑叶是桑科植物桑树的干燥叶,具有降血压、血脂、抗炎等作用,桑叶性味苦、甘、寒,《本草纲目》记载“味苦甘、寒,有小毒”,桑叶中含有的槲皮素、酚类化合物、维生素C等成分能通过抑制或清除自由基来防止氧化损伤,具有类似人参的补益与抗衰老、稳定神经系统功能的作用,能环节生理变化引起的情绪激动,提高体内超氧化物歧化酶的活性,阻止体内有害物质的产生。桑叶能疏散风热,解表清热、养阴生津,在凉茶中适量添加,可清肝明目。
金银花,学名忍冬,性寒味甘,气芳香,甘寒清热而不伤胃,既能宣散风热,还善清解血毒,适用于各种热性病,如发疹、发斑、热毒疮痛、咽喉肿痛等症。
罗汉果含有丰富的维生素C以及糖甙、果糖、蛋白质、脂类等,营养价值很高。罗汉果味甘性凉,归肺、大肠经,有润肺止咳,生津止渴的功效,适用于肺热或肺燥咳嗽,百日咳及暑热伤津口渴等,此外还有润肠通便的功效。
罗汉果含有一种比蔗糖甜300倍的罗汉果甙,罗汉果甙不产生热量,适用于糖尿病人以及肥胖症患者,但是由于含有这种甜味素,通常导致罗汉果过于甜而伤肠胃。罗汉果如果采用阳光晒干,可以代替茶饮,如果采用烘干,则饮用过多,易引发上火。本发明中的罗汉果采用太阳晒干,且少量添加,防止罗汉果甙中伤脾胃。
本发明中的枸杞,是指枸杞的果实,枸杞子,具有重要的药用以及食疗价值,明李时珍《本草纲目》记载:“春采枸杞叶,名天精草;夏采花,名长生草;秋采子,名枸杞子;冬采根,名地骨皮”。
枸杞子性味甘平,具有养肝、滋肾、润肺等功效,可以降低血糖、抵抗脂肪肝、抗动脉粥样硬化,并能够影响免疫功能。
木糖醇,又称戊五醇,为糖醇的一种,木糖醇的甜度与蔗糖相当,但热量只有蔗糖的60%,可以作为蔗糖的替代物。
木糖广泛存在于各种植物中,例如白桦、覆盆子、玉米等,木糖醇主要由木糖加氢还原得到。一方面木糖醇能参与人体代谢,不需要胰岛素就能透入细胞内部,且代谢速度快,适合于糖尿病患者食用;另一方面木糖醇能促进肝糖元的合成,血糖浓度不会上升,对于肝病患者而言,也能起到改善肝功能和抗脂肪肝的作用。
木糖醇在代谢初始,不需要胰岛素的参与,但是在代谢后期,需要胰岛素的促进,进食木糖醇之后,正常人血糖升高的幅度以及速度都低于葡萄糖和蔗糖,糖尿病人如果摄入木糖醇过多,可能会造成血液中甘油三酯升高,引起冠状动脉粥样硬化,因此,即使是对于糖尿病人而言,木糖醇的摄入也需要严格控制。
本发明中的水可以为纯净水或者山泉水。
不同的花草茶,具有不同的属性,例如药性温的花茶不宜与药性寒的花茶搭配饮用,否则会对身体产生有害物质,甚至产生毒性,由于花草茶的种类繁多,每一种花草茶都有不同的药用以及食疗效果,相互搭配时,除了需要考虑各自的属性之外,也应当适当调配口味,保证饮用时的良好口感。
本发明提供的凉茶中,各组分都具有良好的清热解毒功效,且性平味甘,所用的干茶具有一定的苦涩之味,加入罗汉果,依靠罗汉果中的罗汉果甙能够起到一定的调味作用,再加入安全用量的木糖醇,能够有效改良口味,且降低木糖醇的加入量,使糖尿病人能够安全饮用。

通过调配原料中各组成的重量份配比,能够得到口味甘醇、清热解毒、清咽护肝,且适用于糖尿病人引用的凉茶。
本发明还提供了一种凉茶的制备方法,包括以下步骤:
(1)按如下重量份配比称取原料:
(2)将步骤(1)中称取的小叶相思藤叶、大青叶、桑叶、金银花、罗汉果和枸杞烘干、粉碎,得到粉料;
(3)将步骤(2)中的粉料与干茶混合后,在90~100℃水中浸泡20~30min,过滤取液汁;
(4)在步骤(3)所得液汁中加入木糖醇,搅拌溶解,精滤得到所述凉茶。
步骤(1)中将小叶相思藤叶、大青叶、桑叶、金银花、罗汉果和枸杞除杂去劣后,烘干切碎,切碎之后便于各成分中药用成分的析出,优选地,所述步骤(2)中粉料的颗粒大小为60~325目(即250um~44um)。
为了更好地提取干茶中的成分,所述步骤(3)中将干茶粉碎后再与步骤(2)所得粉料相混合。
为了保证口感柔滑,优选地,所述步骤(4)中精滤的过滤精度为1um~5um。
优选地,所述步骤(1)按如下重量份配比称取原料:
本发明提供的凉茶具有清热解毒、清暑利湿、养肝护肝的功效,加入的木糖醇能够改善口感,适合于糖尿病人和肥胖症患者饮用。
具体实施方式
下面结合实施例,对本发明的具体实施方式作进一步详细描述。以下实施例用于说明本发明,但不用来限制本发明的范围。
实施例1
(1)按如下重量份配比称取原料:
龙井30份、小叶相思藤叶9份、大青叶5份、桑叶5份、金银花1份、罗汉果3份、枸杞10份、木糖醇30份,纯净水1000份(量取)。
(2)将步骤(1)中称取的小叶相思藤叶、大青叶、桑叶、金银花、罗汉果、枸杞除杂去劣、烘干,切碎至平均颗粒大小为325目(44um),得到粉料。
(3)在步骤(2)的粉料中加入龙井,用90℃的纯净水浸泡30min,过滤取液汁。
(4)在步骤(3)所得液汁中加入木糖醇,搅拌溶解、精滤(过滤精度为5um)得凉茶。
实施例2
(1)按如下重量份配比称取原料:
龙井40份、小叶相思藤叶12份、大青叶10份、桑叶8份、金银花2份、罗汉果4份、枸杞15份、木糖醇40份,纯净水1500份(量取)。
(2)将步骤(1)中称取的小叶相思藤叶、大青叶、桑叶、金银花、罗汉果、枸杞除杂去劣、烘干,切碎至平均颗粒大小为325目(44um),得到粉料。
(3)在步骤(2)的粉料中加入龙井,用95℃的纯净水浸泡25min,过滤取液汁。
(4)在步骤(3)所得液汁中加入木糖醇,搅拌溶解、精滤(过滤精度为5um)得凉茶。
实施例3
(1)按如下重量份配比称取原料:
龙井50份、小叶相思藤叶15份、大青叶15份、桑叶10份、金银花3份、罗汉果5份、枸杞20份、木糖醇50份,山泉水2000份(量取)。
(2)将步骤(1)中称取的小叶相思藤叶、大青叶、桑叶、金银花、罗汉果、枸杞除杂去劣、烘干,切碎至平均颗粒大小为325目(44um),得到粉料。
(3)在步骤(2)的粉料中加入龙井,用100℃的纯净水浸泡20min,过滤取液汁。
(4)在步骤(3)所得液汁中加入木糖醇,搅拌溶解、精滤(过滤精度为5um)得凉茶。
实施例4
(1)按如下重量份配比称取原料:
龙井40份;小叶相思藤叶15份;大青叶10份;桑叶10份;金银花2份;罗汉果5份;枸杞20份;木糖醇30份;山泉水1000份(量取)。
(2)将步骤(1)中称取的小叶相思藤叶、大青叶、桑叶、金银花、罗汉果、枸杞除杂去劣、烘干,切碎至平均颗粒大小为100目(150um),得到粉料。
(3)在步骤(2)的粉料中加入龙井,用95℃的纯净水浸泡20min,过滤取液汁。
(4)在步骤(3)所得液汁中加入木糖醇,搅拌溶解、精滤(过滤精度为1um)得凉茶。
对实施例1~4制备的凉茶进行口感测试,测试人数为100名,测试结果如表1所示,表中口感类别分为:A、微苦;B、甘中有苦;C、清爽均衡;D、温和细腻。

由表1所示,本发明制备得到的凉茶口感较好,满足大部分人的口感需求,适宜在市场上推广。

5.如权利要求4所述的凉茶的制备方法,其特征在于,所述步骤(2)中粉料的颗粒大小为60~325目。
6.如权利要求5所述的凉茶的制备方法,其特征在于,所述步骤(3)中将干茶粉碎后再与步骤(2)所得粉料相混合。
7.如权利要求6所述的凉茶的制备方法,其特征在于,所述步骤(4)中精滤的过滤精度为1um~5um。
