Abstract
processo, suco de chá e bebida é descrito um processo compreendendo as etapas de: proporcionar folhas frescas de chá compreendendo catequinas; macerar as folhas frescas de chá para deste modo produzir folha fresca macerada; fermentar a folha fresca macerada por um tempo de fermentação (tf) suficiente para reduzir o teor de catequinas em a folha fresca macerada a menos do que 50% do teor de catequinas nas folhas frescas de chá antes da maceração em base de peso seco; e então extração do suco a partir d as folhas maceradas fermentadas para deste modo produzir resíduo de folhas e suco de chá, em que a quantidade de suco extraído é pelo menos 50 ml por kg das folhas frescas de chá.
