Abstract
In producing tea juice from fresh tea leaves which have been sujected to all, or a selected sequence, of the operations of withering, bruising, twisting, fermentation and killing or inactivation of enzymes but not to drying, the juice is separated from the resulting moist leaves, as by mangling, pressing or extraction, and, if desired is then clarified and stabilized by the addition of a preservative, such as benzoic acid. The juice may be separated from moist tea leaves which have been processed to their maximum quality and inactivated, as regards enzymes, according to the process described in Specification 692,778. The juice may be subjected to evaporation, at a temperature below 60 DEG C, to yield a soluble tea powder. The juice can be diluted with water or the powder can be dissolved in water, to yield the beverage tea. Specification 2138/1877 also is referred to.
