Abstract

Vodka made with water infused with a high concentration of molecular hydrogen and that can be used in the alcohol beverages production industry. Before bottling, the solution is infused with molecular hydrogen (H2), which acts as a powerful antioxidant. A new vodka called H2V Vodka (hydrogen vodka) is about 37-43 % of alcohol in specially treated water, Hierochloe Odorata 0.07-0.08 vol% (the first extract according to "Formulas of alcoholic beverages and vodka" Moscow, Ministry of Food Industry 1981 (page 300)), 0.02 -0.03 vol% hazelnut extract in form accepted by the food safety authorities and approximately 2.3 -4.6 mg/L of sodium bicarbonate.

Description:
The present invention relates to the improvement of alcoholic beverages and more particularly, to the improvement of the production processes, quality and biological properties of vodka. The proposed method relates to the preparation of vodka with improved properties and comprises mixing water treated according to the Russian Federation (RF) Standard of Vodka Production GOST 12712-2013 (Page 6) and high quality absolute alcohol (96% Ethanol), the treatment of the mixture with activated coal followed by filtration and the addition of natural aroma ingredients, including extract of hazelnut and Hierochloe Odorata. The water and ethanol spirit mixture is filtered, natural aroma and other optional ingredients are added to the filtrate and the solution is checked. If it is necessary, acidity is corrected by the addition of sodium bicarbonate, after being filtered again. Before bottling, the solution is infused with molecular hydrogen (H2), which acts as a powerful antioxidant. A new vodka called H2V Vodka (hydrogen vodka) is about 37-43 % of alcohol in specially treated water, Hierochloe Odorata 0,07-0,08 vol% (the first extract according to Formulas of alcoholic beverages and vodka Moscow, Ministry of Food Industry 1981 (page 300)), 0.02 - 0.03 vol %hazelnut extract in form accepted by the food safety authorities and approximately 2.3 - 4.6 mg/L of sodium bicarbonate. Exact quantity of sodium bicarbonate should be defined after the spirit and water mixing tests are undertaken to bring the pH of the mixture to the acceptable level.

  1. Claims:
    0001 Vodka made with water infused with a high concentration of molecular hydrogen and presented invention can be used in the alcohol beverages production industry. 0002 The present invention relates to vodka and to a process vodka production comprising mixing water and ethanol spirit as defined in RF Standart of Vodka Production GOST 12712-2013, then treating the mixture with activated coal, adding aroma compounds and other optional ingredients and treatments. The prevalent part of this invention is the introduction of hydrogen infusion. The addition of aroma and other ingredients in defined quantities proposed in this invention also acts in a way which retains the major flavor of the vodka in a mild and tasteful manner with a pleasant aftertaste. Additionally, the use of selected aroma ingredients enhances the biological value of the drink. 0003 At present, a widely known method of production of vodka consists of the consecutive mixing of water-alcohol liquid with sugar syrup, various aroma compounds (for instance synthetic aromatizers for disguising the fusel odor of alcohol), adding other optional ingredients, and subsequent filtering of the mixture [ Formulas of alcoholic beverages and vodka Moscow, Ministry of Food Industry 1981], 0004 Such a method is somewhat simplistic; it is the basic method of vodka production. However, the vodka produced by this method does not have sufficient organoleptic qualities. During the filtration, sugar settles on the surface of activated coal decreasing its absorbability. This decreases the filtration quality and as result the final product - vodka contains the residual traces of fusel oils. Moreover, presence of sugar increases level of calories in the product. The vodka produced by this method has a strong odor of the used aromatizer and the drink has an unnatural synthetic taste. The aromatizer evaporates with time and this causes a harsh alcoholic aftertaste. 0005 Russian patent RU no. 2171283 discloses a method of production of vodka which consists of obtaining a water-alcohol liquid, filtration and mixing of the water-alcohol liquid with aroma and other ingredients. According to this method the obtained water-alcohol liquid is filtered in activated coal columns, then aroma and other ingredients of the formula of vodka are introduced in the obtained purified water-alcohol liquid. The ingredients are mixed until homogeneous, filtered and bottled after further treatment (Russian Patent - 2171281). 0006 Organoleptic parameters of this vodka are better than in the vodka produced by the method first mentioned. However, fusel oils present in the water-alcohol liquid still form a film on the surface of activated coal and this retards the technological process, as the flow rate through the column slows down and impairs the taste of vodka. In addition, this technology does not improve the biological qualities of the product. 0007 The aim of the presented invention is to provide a process improving organoleptic quality and biological and nutritional value of the drink. 0008 As it is mentioned in the preamble, the present invention introduces a process whereby a mixture of the water and spirit “Lux” is created after the treatment with absorbent coal, then the mixture is filtered, aroma and other ingredients are added to the filtrate as well as sodium bicarbonate. The resulting substance is filtered again and finally hydrogen (H2) is infused into the mixture before bottling. All these manipulations are done at room temperature. It is to be noted that unlike mixed flavoured drinks that use flavoured soda water, (Commonly called Alco Pops) Hydrogen infused Vodka relates to the infusion of Hydrogen into the Vodka itself therefore changing its qualitative properties.

    The proposed vodka has a relatively low toxic effect of ethanol on the body. In particular, due to the optimal enhancement of biologically active substances of hazelnut and Hierochloe Odorata, the biological value of the product is enhanced. Using natural ingredients, along with the complex of biologically active substances, in proposed quantities significantly softens and reduces the effect of hangover syndrome.
    The following ingredients are included in the composition to the proposed vodka: specially prepared water; ethanol spirit “Lux” (RF Standart of Vodka Production GOST 12712-2013); extract of hazelnut (by Australian Chef’s Choice Company or US OliveNation LLC); molecular hydrogen, sodium bicarbonate and carbon filters (GOST). _____________________________________________
    Water in vodka production is the main raw material component, which is a little less than 60% of total volume of vodka. The main water criteria are its hardness and salt composition defined in standard of RV GOST 51232-98. The total hardness of water should not exceed 1 mg /1 for natural soft water and 0.36 mg /1 for softened analogues. Water preparation is the initial stage in the process of vodka production, taking into account that the main task of water treatment is water softening, removal of various mechanical inclusions and colloid substances which can influence the resistance and organoleptic characteristics of the product. There are many different methods of water treatment technologies in different vodka production factories. Choosing the most appropriate one will depend on many parameters such as economic efficiencies, availability of required equipment etc. The result of water treatment using these methods provides acceptable level of the water quality required for vodka production. A very important part in this stage is to find right source of the raw water as it will have a significant impact on the taste of the final product.
    Next ingredient is Ethanol spirit. For the production of H2V vodka it is proposed that the quality spirit “Lux” is used. According to Russian Standards for Rectified ethyl alcohol specification physical and chemical properties of the spirit Lux conforms the requirements presented in the following table (GOST 5962-2013. Page 3-4) and RF Standart of Vodka Production ( GOST 12712-2013) .

    Sodium bicarbonate specification should be according to Australia New Zealand Food Standards or RF standard GOST 2156-71 (with amendments No 1,2,3,4). This ingredient is used as an acidity regulator.

    0015 Aroma ingredients include the following: Hierochloe Odorata and hazelnut extracts. These ingredients are accepted for use in Vodka and beverages production by RF Standart of Vodka Production ( GOST 12712-2013) and Australia New Zealand Food Standards. 0016 In the invention formula, Hierochloe Odorata is used in the form of the first extract produced according to Formulas of alcoholic beverages and vodka Moscow, Ministry of Food Industry 1981 (page 300). To keep the natural smell and taste of vodka, very small quantities of Hierochloe Odorata are used in the mixture. In comparison with Vodka Zubrovka using 8% V of the first and second extracts according to Formulas of alcoholic beverages and vodka Moscow, Ministry of Food Industry 1981 vodka H2V is using just 0.6-0.7% of the first extract of Hierochloe Odorata. 0017 Another aroma ingredient used in the present invention is hazelnut extract. After long search through a few producers in the world, the Australian natural hazelnut extract produced and distributed by Australian Chef’s Choice Company has been chosen. However, there are many other producers that can provide the hazelnut extract with similar properties. As example, extract produced and distributed by US company Olive Nation LLC is suitable for the proposed invention as well. The total amaunt of 0.02 - 0.03 vol % of the hazelnut extract is used in the mixture. 0018 This quantity of both extracts does not change the color of the mixture and taste of the ingredient and their flavors does not prevail. Rather it gives a slight softness to the taste and creates a pleasant after taste. Also using selected aroma ingredients increases biological value of the drink. 0019 Finally enrichment of the invented vodka by molecular hydrogen H2 significantly enforces biological value of H2V Vodka. The numerous publications on its biological and medical benefits revealed that H2 reduces oxidative stress not only by direct reactions with strong oxidants, but also indirectly by regulating various gene expressions. Moreover, by regulating the gene expressions, H2 functions as an anti-inflammatory and anti-apoptotic, and stimulates energy metabolism. Hydrogen functions as an important regulatory factor with antioxidant, anti-inflammatory, and protective effects on cells and organs. Oral intake of liquid that contains hydrogen represents a novel and safe method of delivering hydrogen to humans. 0020 During the production, the water-alcohol liquid treats with activated coal in the coal filters. 0021 The technical result of the present invention is the production of vodka with prophylactic properties for the protection of the body acting as factor with antioxidant, anti-inflammatory, and antiapoptotic protective effects on cells and organs and the ability to mitigate a variety of diseases. Oral intake of liquid that contains hydrogen represents a novel and safe method of delivering hydrogen to humans. A large number of studies have explored therapeutic and preventive effects of hydrogen. These studies cover many biological effects against oxidative stress in almost all organs (Ohta, 2011,2012). 0022 Moreover, it has been revealed that hydrogen has more functions, including anti-inflammatory, antiapoptotic, and anti-allergic effects. Hydrogen has the capability to act at the cellular level. Hydrogen is qualified to cross the blood brain barrier, to enter the mitochondria, and even has the ability to translocate to the nucleus under certain conditions. Once in these ideal locations of the cell, previous studies have shown that hydrogen exerts antioxidant, anti-apoptotic, anti-inflammatory, and cytoprotective properties that are beneficial to the cell. Adding biologically active elements contained in the extracts of Hierochloe Odorata and hazelnut creates various health benefits and together with molecular hydrogen bring a unique combination providing many health benefits of the aroma ingredients used that: strengthens the blood vessels; improves metabolism; has antibacterial action; normalizes function of the nervous system; stabilizes function of the heart; and shows antiseptic properties.

    0023 It is the first time vodka with unique properties of molecular hydrogen on a base of mixture high quality ethanol spirit “Lux” and specially treated water and high qualities of natural Hierochloe Odorata’s and hazelnut’s extracts is being proposed. More over the small quantities of these extracts do not completely change taste and smell of the vodka but give it a very mild and very pleasant smell, taste and aftertaste with taste tests producing positive results.
    0024 The proposed vodka production goes according to the known technology by mixing specially treated water with high quality ethanol spirit “Lux”. Specification of alcohol and water is provided above. The strength of this mixture is 40% of alcohol. The mixture should be thoroughly mixed, put through activated coal battery. According to existing technology, the filtration rate is up to 40 dal / per hour for fresh coal and up to 30 dal / per hour for regenerated coal. Then the vodka goes to an adjustable vat and extracts of Hierochloe Odorata and hazelnut are added into the mixture. After thoroughly mixing the mixture, the level of acidity should be checked and, if necessary, should be corrected by sodium bicarbonate with specification mentioned above.

    When acidity comes to acceptable levels, the mixture goes through a filter and into a pressurize tank. Hydrogen (H2) is to be put through the mixture under the pressure in very small bubbles. Timing of hydrogen infusion depends on the size and form of pressurized vessel and pressure that can be applied. The hydrogen vodka is immediately bottled after hydrogen has been infused.
    The present invention will be desribed further by the following example which is not to be considered as restricting the scope of the invention in anyway.
    ______________________________________Example_____________________________________ Vodka H2V Vodka is prepared using alcohol Lux and water obtained by mixing softened water with 25 water preliminarily treated by the method of reverse osmosis, normalized by a parameter of alkalinity within 2-3 meq/l. Alcohol or spirit Lux has been described in the
    State Standard of the Russian Federation, GOST 5962-2013, Group 74.
    According to Russian Standards for Rectified ethyl alcohol specification physical and chemical properties of the spirit Lux conforms the requirements above.
