Abstract

Un proceso para la reducción del contenido de alcohol de bebidas alcohólicas, especialmente vinos, preservando las características organolépticas de la bebida original. El proceso consiste en la remoción total o parcial del etanol utilizando las membranas de nanofiltración, las que permiten el paso de una mezcla de agua, etanol y algunas sales, mientras retienen los componentes aromáticos en la bebida original. La impregnación, la mezcla de agua y etanol que atraviesa la membrana es destilada para remover el etanol. Luego de la eliminación del etanol, esta corriente es recirculada a la bebida a ser tratada, permitiendo la producción de una bebida con menor contenido de alcohol que conserva las propiedades organolépticas de la bebida original.
