    Six Sigma has been utilised to analyse defects of fish steak processing at PT X located in North Jakarta. The tools of the Six Sigma implemented in the study were Define, Measure, Analyse and Improve. The observation was conducted for two months in 2020 before the company was temporarily shut down due to Covid-19 pandemic. Four defects were detected during the study, ie under size fish, softened meat, off odor and green coloration of meat, totaling 2,446 kg out of 15,080 kg of fish. Further analysis showed that the Sigma level was 3.24 with a Defect per Million Opportunities (DPMO) of 40,739. Some improvements were recommended based on cause-effect diagram.

    Screening of fibrinolytic activity of tempeh extract derived from Rhizopus oligosporus ATCC 6010 fermentation has been investigated. The fermentation used Glycine Soja Sieb. et Zucc, Canavalia ensiformis, Phaseolus radiaus L., Lablab purpureus,  Glysine  max (L) Merrill, Glycine Soja Sieb. et Zucc, and Vigna  unguiculata as substrates. Nattokinase and phosphate buffer 0,05 M pH 5,0 was used as positive and negative control respectively. The proteolytic and fibrinolytic activity of fermentation product used five kinds of legumes has been compared each other. The Glycine Soja Sieb. et Zucc exhibited the highest activity with proteolytic and fibrinolytic index of the crude enzyme is 3.00 ± 1.58 and 3,07 ± 0,15 respectively. Ratio of the proteolytic and fibrinolytic index between the crude enzyme and nattokinase is 112,36 % and 88,14% respectively.

    Abstrak: Desa Pagedangan Ilir merupakan desa yang mempunyai potensi yang sangat besar di bidang perikanan khususnya baby crab. Perlu pemanfaatan potensi baby crab di Desa Pagedangan Ilir dengan mengolahnya untuk meningkatkan nilai tambah baby crab. Tujuan dari kegiatan pengabdian ini adalah untuk meningkatkan keterampilan masyarakat Desa Pagedangan Ilir dalam mengolah baby crab krispi. Kegiatan pengabdian dilakukan dengan dua tahap, tahap pertama yaitu pemberian materi yang dilakukan melalui ceramah dan diskusi secara tatap muka (luring) sedangkan tahap kedua yaitu kegiatan praktik pengolahan baby crab krispi yang dilakukan secara langsung.     Penilaian kesegaran ikan mas secara sensori perlu dilakukan karena penilaian tersebut bersifat mudah dan murah. Penilaian sensori kesegaran ikan mas menggunakan metode Demerit Point Score (DPS) belum pernah dilakukan sebelumnya. Penelitian ini dilakukan dengan cara mengamati perubahan sensori ikan mas (Cyprinus carpio) menggunakan scoresheet DPS baku selama 24 jam penyimpanan suhu ruang dengan interval pengamatan setiap 4 jam sekali. Skor DPS ikan mas mengalami peningkatan seiring dengan lamanya waktu penyimpanan. Hasil pengamatan menunjukkan bahwa ikan mas masih layak konsumsi pada jam ke-8 penyimpanan suhu ruang dengan skor DPS sebesar 15,5. This research aims to examine different management techniques for PIM Muara Baru utilizing a Strength, Weakness, Opportunity, and Threat (SWOT) analysis. The findings indicate that an aggressive strategy is required. Alternative management strategies include improving facilities and adding products sold at the food court, assigning special employees to promote and implement more intensive and innovative promotional activities on social media, collaborating with the government in optimizing Gemarikan (a national program to popularize eating fish), cooperating with online business partners and increasing merchants' capacity to transact online, adding facilities and improving the service quality. Pasar ikan modern Sabilulungan yang baru dibangun membutuhkan strategi untuk pengelolaan yang tepat untuk menjamin tercapainya tujuan dan PIM yang mampu bersaing di masa sekarang dan masa yang akan datang.     Susyi adalah pangan siap konsumsi asal Jepang, merupakan kombinasi nasi yang diberi asam dan ikan mentah. Umumnya susyi terdiri dari beberapa jenis, namun terdapat dua jenis susyi yang sangat dikenal yaitu nigiri (nasi dengan ikan mentah di atasnya) dan maki (nasi dengan ikan mentah di dalamnya). Ikan dalam susyi tidak mengalami pemanasan sehingga rentan terhadap kontaminasi patogen, di antaranya Staphylococcus aureus dan Bacillus cereus. Kedua bakteri ini telah dilaporkan sebagai penyebab Kejadian Luar Biasa (KLB) di Indonesia, namun keberadaannya di dalam susyi belum pernah dilaporkan.     Sargassum sp. has been known as a natural source of antioxidants. In Indonesia, Sargassum sp. grows very well yet it has not been utilized optimally. Sargassum sp. could be utilized as herbal tea through the drying process. However, the process can affect its antioxidants; therefore, this study aimed to determine the effects of drying conditions on phenolic contents and antioxidant activity of Sargassum tea. Fresh Sargassum sp. was harvested from Lima Island, Serang, Banten, Indonesia. Upon arrival at the laboratory, Sargassum sp. was washed with tap water then soaked in 5% lime solution (1:8) for 6 hours. The Sargassum was then dried at three different conditions (sun drying, air oven at 40 °C and 55 °C). The dried Sargassum sp. (2 g) was packed in the tea bag then brewed in 150 ml boiled water for 3 minutes for analysis; i.e., total phenolic contents, antioxidant activity, and sensory properties (color, taste, and flavor).     Shrimp is an important non-oil commodity for foreign trade in Indonesia. However, rejection of shrimp exports by the importing countries is still commonly encountered. In 2011, the USFDA recorded two cases of Salmonella spp. contamination in shrimp products from two shrimp processing companies in Indonesia. Analysis of Salmonella spp. in seafood is generally performed using a conventional method which takes at least 5 days. The objective of the study is to get a Salmonellae rapid detection method in shrimp by PCR. In this study, optimization of PCR protocol method to detect Salmonella invA gene was conducted using six different annealing temperatures (59, 59.5, 60.8, 62, 64 and 64.5°C). The results showed that 64°C was the optimum annealing temperature to detect the 284 bp fragment of Salmonella invA gene.     This paper reports an analysis of formaldehyde in dried salted short mackerel (Rastrelliger brachysoma) which was intentionally added with formaldehyde compared to those that was not. The purpose was to see whether salting could cover up the illegal use of formaldehyde. Mackerel was obtained from one day fishing landed at Karangantu Fishing Port, Serang-West Java. The fish was transported in ice by road (3 hours) to the laboratory in Jakarta, and divided into two groups upon arrival. One group was soaked in 3% (w/v) formaldehyde solution for 30 minutes, while another group was not (control treatment). They were then salted in saturated brine for 12 and 24 hours at ambient temperature and sun dried subsequently to 40% moisture content or less. The formaldehyde content of raw materials was in the range of 1.4-1.7 ppm, indicating that natural formaldehyde was present in the fish. Soaking in 3% formaldehyde solution for 30 minutes significantly increased fish formaldehyde content from 1...

Salahsatunya adalah Kementerian Kelautan dan Perikanan (KKP) yang melalui Balitbang KP (Badan Penelitian dan Pengembangan Kelautan dan Perikanan) berhasil menerbitkan Peta Sebaran Terumbu Karang Nasional oleh Pokja Pemetaan Sumber Daya Pesisir pada 2013. Disusul kemudian dengan Peta Karakteristik Laut Nasional dan Peta Habitat Lamun Nasional. Peta-peta tersebut merupakan langkah awal yang nyata dan akan ditindaklanjuti dengan pembaruan-pembaruan data dan informasi.     T. soro, in Indonesia called salmon van Java is of high economic value, and due to high demand, its culture has been intensively studied and developed. This study aimed to assess the nutritional value of wild and cultured T. soro. The fish’s proximate compositions, minerals, as well as amino and fatty acid profiles were analyzed. A t-test analysis was used to identify differences between treatments. Results showed that the fat content of wild T. soro was higher than that of cultured fish, but the protein, water, and ash contents between the two groups were not significantly different (p >0.05). T. soro was considered a lean fish with higher concentrations of PUFAs (polyunsaturated fatty acids) than MUFAs (monounsaturated fatty acids). The amino acid profile was dominated by lysine, phenylalanine, and allo-isoleucine. Both groups of fish were a good source of macro- (Na, K, Ca) and microminerals (Zn, Fe), except for selenium (Se).     Peptones from fish waste has been widely studied, however information about its shelf life is stilllimited. This study aims to test the storability of dried peptone from tuna and shrimp waste produced through hydrolysis using alcalase enzyme. Peptone powders were packed in HDPE plastic bottles and plastic coated aluminum foil, stored at room temperature, and periodically observed in quality (moisture content, aw, color and appearance). A test was also performed on their ability to support the growth of Staphylococcus aureusbacteria; all were compared to commercial peptone (Difco). Shrimp waste peptone had the highest moisture, ash calcium contents, while tuna peptone has the highest fat content. During five month storage at ambient temperature, all peptones experienced a slight decrease in quality. Enzim ini kemudian diaplikasikan pada daging lumat ikan mata goyang (Priacanthus macracanthus) lalu diamati sifat fisik (tekstur) produk restrukturisasi yang dihasilkan. Sebagai pembanding,  dilakukan aplikasi TGase komersial (KTGase) pada daging lumat yang sama.     Isolasi dan karakterisasi parsial kolagen dari teripang gamma (Stichopus variegatus) telah dilakukan. Isolasi dilakukan melalui tiga tahap yaitu preparasi, ekstraksi dan isolasi. Tahap preparasi meliputi tahapan penyiangan, pencucian dan perendaman dalam akuades, dalam alkohol, dalam larutan Tris-HCl dan etilenadiaminatetraasetat  (EDTA) dan perendaman dalam larutan natrium hidroksida (NaOH). Ekstraksi dilakukan dengan perendaman asam asetat 0,5M. Isolasi dilakukan dengan cara pengendapan menggunakan NaCl dilanjutkan proses dialisis. Isolat kolagen teripang gamma yang diperoleh memiliki rendemen sebesar 16,40% (bobot kering), nilai pH 6,08 dan derajat putih 77,02%. Gugus fungsi kolagen terdiri dari amida A (3412 cm-1), B (2929 cm-1), I (1654 cm-1), II (1554 cm-1), dan III (1239 cm-1).     Peptones from fish waste has been widely studied, however information about its shelf life is stilllimited. This study aims to test the storability of dried peptone from tuna and shrimp waste produced through hydrolysis using alcalase enzyme. Peptone powders were packed in HDPE plastic bottles and plastic coated aluminum foil, stored at room temperature, and periodically observed in quality (moisture content, aw, color and appearance). A test was also performed on their ability to support the growth of Staphylococcus aureusbacteria; all were compared to commercial peptone (Difco). Shrimp waste peptone had the highest moisture, ash calcium contents, while tuna peptone has the highest fat content. During five month storage at ambient temperature, all peptones experienced a slight decrease in quality.
