    The aim of this study was to formulate of blend Frankfurter sausage by addiotn of frozen skinless Talang queenfish fillet mince while preserving its quality and textural characteristics. Treatments were included of suasages containing 5%, 15%, 25%, 35% and 50% in replacement with red meat and some biochemical characteristics, textural properties, color parameters and sensory attributes of blend sausages were investigated. Addition of fish fillet mince increased the crude proteins content from 14.10% in control to 15.63% in treatment containing 50% fish fillet mince (p<0.05). Based on the TPA results, by increasing the proportion of fish fillet mince at either 35% and/or 50%, hardness was increased by ~ 40% and 16%, respectively, (P<0.05).     این پژوهش با هدف بهینه¬سازی بازیافت نیتروژنی پروتئین آبکافت¬شده از سر و بازوی ماهی مرکب ببری (Sepia pharaonis) با استفاده از آنزیم آلکالاز صورت پذیرفت. جهت بهینه¬سازی شرایط تولید پروتئین آبکافت¬شده از روش سطح پاسخ (RSM) بر اساس طرح باکس-بنکن استفاده شد. در این مطالعه، اثر سه فاکتور نسبت آنزیم به سوبسترا، دما و pH روی بازیافت نیتروژنی به‌عنوان سطح پاسخ مورد بررسی قرار گرفت. مدل ریاضی، برازش خوبی با داده¬های آزمایش داشت، زیرا 2R معادل 96/0 نشان داد که قسمت عمده تغییرات درون محدوده آزمایش توسط مدل، قابل توضیح است. براساس نتایج به¬دست¬آمده، شرایط بهینه عبارت بودند از دمای 69/52 درجه سانتی‌گراد، 50/8 :pH و نسبت آنزیم به سوبسترای 92/1 درصد، که منجر به بازیافت نیتروژنی معادل 89/36 درصد گردید. عدم معنی¬داری در فاکتور فقدان برازش در این مطالعه نیز گواهی بر قابلیت مدل در پیش¬بینی دامنه-های مورد استفاده در این آزمایش می¬باشد. بررسی ترکیب آمینواسیدی پروتئین آبکافت¬شده حاصل از شرایط بهینه سر و بازوی ماهی مرکب ببری نشان داد که این پروتئین دارای ارزش غذایی بالایی است. شاخص شیمیایی پروتئین آبکافت¬ش...

    ABSTRACT This study aimed to determine the effect of synbiotic (Biomin IMBO) as feed additive on beluga (Huso huso) juvenile with an average body weight of 26.45 ± 0.19 g. Experimental diets at which supplemented with 1.0, 2.0 and 4.0 g synbiotic per kg of feed were fed to beluga juvenile, whereas the control group was fed with no synbiotic. After the feeding trial for 8 weeks, growth performance, survival, lactobacillus bacterial count, blood indices and immunity were tested. Even though, some growth performance and feed utilization parameters including WG, SGR and FCR were improved in group fed with 2.0 g kg−1 synbiotic; however, there were no significant differences (P > 0.05) in growth and feeding parameters between juveniles fed control and synbiotic supplementation diets. In terms of intestinal microbiota, there were no significant differences in total and lactic acid bacteria among treatments (P > 0.05). In addition, there were no significant differences of RBC counts, haematocrit, monocyte, lymphocyte, neutrophil, serum glucose and serum total protein levels between the treatment groups (P > 0.05), but group 2 and 4 g kg−1 synbiotic showed a significant difference (P < 0.05) in WBC counts and haemoglobin, respectively. Furthermore, alternative complement activity (ACH50) and serum total immunoglobulin (Ig) were significantly increased in 2.0 g kg−1 synbiotic fed fish (P < 0.05); however, it did not change the lysozyme activity, significantly (P > 0.05). These results indicate that synbiotic improves immunity of beluga sturgeon without detrimentally impacting the growth performance, modulates intestinal microbiota and basic haematological parameters assessed. Thus, we suggest that 2.0 g kg−1 level of synbiotic may be used as an immunity promoter for beluga sturgeon juvenile.

    The aim of this study was to evaluate the influence of a synbiotic (Biomin IMBO) on serum parameters and feeding efficiency in rainbow trout (Oncorhynchus mykiss) fingerlings. The fish with initial average weight of 4.59 ± 0.2 g were randomly assigned to four dietary treatments for two months. The dietary treatment (0.5, 1 and 1.5 g/kg of diet) was supplemented with basal diet and non-supplemented basal diet was used as control. After two months, all treatments supplemented with synbiotic showed significant (p < 0.05) increase in final mean weight, weight gain percentage, specific growth rate, condition factor, food conversion efficiency and survival rate, compared to the control group. Among all supplemented treatments, the best result in terms of growth factors and survival was observed in the treatment supplemented with 1 g synbiotic per kilogram of diet. Furthermore, supplementation with symbiotic, specifically 1 and 1.5 g/kg, significantly (p < 0.05) increased the total serum protein, but there was no significant (p > 0.05) difference in globulin content, albumin/globulin ratio, and triglyceride content among experimental treatments. In terms of body composition, carcass protein content of fish fed with synbiotic significantly (p < 0.05) increased compared to the control. These results revealed that a feeding regime with synbiotic for two months led to a significant increase in growth performance, survival rate and feeding efficiency in rainbow trout fingerlings.
