Abstract
Description
(1) ヒマワリ茎から分離された親油性のピスファイバー由来の天然結着補材、
(2) (1)記載の天然結着補材を含有した食肉加工品、
(3) 鶏肉ソーセージであることを特徴とする(2)記載の食肉加工品、
(4) (1)記載の天然結着補材を含有した麺類又は菓子類
である。
表1に記載のような配合割合で鶏肉ソーセージを作成し、70℃20分加熱後冷却し、3000×gの遠心力の分離によって離水率を測定した。
2.ヒマワリピスファイバー 0.05g添加 59%(離水量5.2g、保水量3.6g)
3.ヒマワリピスファイバー 0.15g添加 51%(離水量4.4g、保水量4.3g)
以上の結果から、ヒマワリピスファイバーを加えることにより、離水率が減る、すなわち保水率が高まることがわかる。
50ml遠沈管にヒマワリピスファイバー(1mmアンダー)と、保油性、ドリップ防止を商品説明に記載している、市販のビートファイバー(日本甜菜糖株式会社製150ミクロンアンダー)を嵩で20mlメモリーまで入れ、更にハイオレイックサフラワーオイルを管一杯まで入れ、粉と良く混ぜた後、遠心分離機で遠心力1000×g、10分間で離油量を計り、各ファイバーの自重に対しての保油量率を計算した。
ヒマワリピスファイバーを入れて鶏肉ソーセージを製造した。
塩 2.5部
砂糖 1 部
漁醤 0.7部
香辛料 1.5部
海藻粉末 3部
ヒマワリピスファイバー 0.06部
製造方法は次の手順で行った。

漬け込んだ後の肉をチョッパーで挽肉にする

ミキサーで調味料を加え、最後にヒマワリピスファイバーを添加し、よく練る
↓
腸詰め
↓
ドライ、スモーク
↓
ボイル
↓
冷却
↓
包装
↓
殺菌
↓
保管
以上の結果、豚肉、鶏肉、魚肉、全てに共通で、市販できる適度な硬さと弾性を有するソーセージが出来た。
ハンバーグにおいて、ヒマワリピスファイバー1%配合と、ビートファイバー1%配合で比較を行った。
うどん粉、及びそば粉に0.3%のヒマワリピスファイバーをつなぎとして麺を作ったところ、プリプリ感があり艶があり、食感の良い、うどん、そばが出来た。8人で官能試験を行ったが、全員が、プリプリ感が今までにない食感であり、非常に美味しいとの感想であった。従って、油脂を含まない食品においても十分に繋ぎ効果があることが分かった。
バターリッチクッキーを次の配合で製造した。
バターを使わず、小麦粉100、卵30、砂糖30にヒマワリピスファイバーを小匙一杯0.3を入れた配合と入れない配合のスポンジケーキの比較試験を行った。
チョコレート100 クリーム80 水飴30に、ヒマワリピスファイバー0.5を入れた配合と入れない配合で比較を行った。
人体に悪影響を及ぼす重合リン酸塩を使用することなく、通常加工肉としては使用が難しいと言われている、むね肉を100%、と50%にヒマワリピスファイバーを使用して、下記表3の配合により鶏肉ソーセージを製造した。その結果、いずれも硬さと弾力性のある鶏肉ソーセージを得ることができた。
試料は1cm幅に輪切りにした。測定するまでに室温(22℃)に1時間静置した。測定は資料に対して2回負荷をかける2バイト法により行った。プランジャーは2種類用いた。ソーセージ断面よりも大きいプランジャー(7.1cm2)では、ソーセージ全体を押し潰すように負荷をかけた。他方、ソーセージの断面より小さいプランジャー(0.2cm2)ではソーセージの一部に負荷をかけた。その他の測定条件は、bite speed:2mm/sec,clearance:5mmとした。
表4に記載のような結果から、
1.ソーセージ全体に負荷をかけた場合(プランジャー面積7.1cm2)、鶏ムネ肉ソーセージは、JAS標準ソーセージに比べると、硬さおよびガム性が高かった。凝集性および弾力性は同等であった。

- 請求項1記載の天然結着補材を含有した食肉加工品。
- 鶏肉ソーセージであることを特徴とする請求項2記載の食肉加工品。
- 請求項1記載の天然結着補材を含有した麺類又は菓子類。
