Abstract

【課題】乳酸合成能を有する酵母，及び酵母を用いた乳酸の製造方法を提供する。本発明は，乳酸耐性や乳酸合成能に優れた酵母を提供することを目的とする。本発明は，酵母を用いた効果的な乳酸の製造方法を提供することを目的とする。【解決手段】上記の課題は，ＤＮＡポリメラーゼの校正機能を抑制した酵母の変異株を，少なくとも１％（ｖ／ｖ）以上の乳酸濃度下で培養した後，生存細胞を単離する工程を含む方法により乳酸耐性を有する酵母を得て，その酵母に，乳酸合成酵素遺伝子を導入することにより乳酸合成能も有する酵母を得て，乳酸を製造することにより解決される。
