Abstract

　本発明は、苦味、酸味及び雑味が低減され、各種の飲料等への配合性が良く、これを配合した飲料等を殺菌処理した際の非重合体カテキン類の安定性の高い茶抽出物に関する。 （１）固形分中の非重合体カテキン類（ａ）が４５～９０重量％であり、 （２）非重合体カテキン類中のガレート体率が０．００１～４７重量％であり、 （３）没食子酸量／非重合体カテキン（重量比）が、０．３以下である精製茶抽出物。
