Abstract

A method for the preparation provides mixing husk of grapes with ethyl alcohol, separation of extract from solid phase and concentration thereof under vacuum. After mixing husk of grapes with ethyl alcohol the obtained mixture is infused in hermetic conditions, concentration is carried out till withdrawing alcohol from extract with subsequent introduction of invert sugar therein. The invention relates to the food industry, in particular to making food concentrates of polyphenols from the husk of grapes.
