Abstract

The invention relates to dairy industry. A process for cheese production provides for milk pasteurization, cooling up to temperature of setting, addition of calcium chloride, mesophilic starter culture and milk setting enzyme, formation of rennet clot, clot cutting and cheese grain formation, removal of the whey, second heating, self-pressing, pressing, salting and ripening. Prior to introduction of mesophilic starter culture biological treatment of milk with acidophilic starter in quantity of 1-2 % is carried out, mesophilic starter is added in quantity of 1-2 %, milk setting enzyme is added on the basis of 1.8-2.0 g per 100 kg of milk, whey is removed in a single step in quantity of 60-70 %, the second heating is carried out with hot water up to the whey temperature of 37-38°C, and pressing is carried out for 120-140 minutes.
