Abstract

A differential and selective culture medium for Zygosaccharomyces bailii and Zygosaccharomyces bisporus yeasts comprises a base mineral medium supplemented with vitamins and oligoelements required for yeast growth, glucose and formic acid as the only carbon and energy sources and appropriated acid-base indicator having a pKi between 4.5 and 4.8 and optionally and antibiotic inhibitor of bacterial growth and agar. Also described is a process for the detection of Zygosaccharomyces bailii and Zygosaccharomyces bisporus yeast comprising using the differential and selective culture medium.
