Description
Procedure for fine division or grinding of grainy food or pleasure products, especially roasted coffee beans.
When grinding roasted coffee beans, particularly in the case of fine grinding aimed at achieving better leaching, such heating of the grinder and the grinding material occurs that the oil content of the coffee beans mixes like a paste with the coffee flour, whereby, when the ground coffee is poured over with hot or boiling water, the quantity of substances extracted from the coffee flour is reduced and the taste and quality of the coffee reduced. The oil content, which loses its density during painting due to the heating, is exposed to oxidation and both quality and taste deterioration when exposed to air and its oxygen. For coffee or other grinding goods, it is admittedly known to use water-cooled mills with water circulation in hollow walls. At these mills, however, the grinding does not take place in closed rooms without access to fresh air or oxygen, so that the oil content in the grinding material is always adversely affected and the aroma is significantly weakened or disappears completely.
Foreliggende oppfinnelse angår en The present invention relates to a
fremgangsmåte til findeling resp. maling av kornede nærings- eller nydelsesmidler med fett- eller oljeinnhold, særlig brente kaffebønner, i med kjøleinnretninger forsynte findelings- resp. maleinnretninger og i en atmosfære av en inaktiv gass, særlig kullsyre. procedure for fine division or grinding of grainy foodstuffs or pleasure products with fat or oil content, especially roasted coffee beans, in shredding resp. grinding devices and in an atmosphere of an inert gas, especially carbonic acid.
However, this is uneconomical and, in the case of coffee, harmful to the aroma. The invention is characterized by the fact that pressurized carbon dioxide is led into the grinding chamber, where during its expansion it pushes the air out of it and is directed towards the grinding organs, whereby in addition to protecting the grinding material against the oxygen in the air, a deep cooling of the grinding chamber to a temperature between 0° C and -f- 15° C. The deep-cooling of the ground material and the chambers it passes through takes place with the help of carbonic acid supplied in pipelines and sprayed through outlet nozzles, the air displaced by the sprayed carbonic acid being removed from the chamber through devices in the chamber wall, which only allows outflow. The carbonic acid injected at high pressure into the chamber is also directed at the grinding parts of the shredding or grinding device and at the grinding material that passes these parts, so that the heat generated by friction during grinding is completely neutralized. The comminution and grinding device used to carry out the method is equipped with an airtight, closed grinding chamber, which is provided with means for deep cooling with inert, expanding gases, which do not contain oxygen.
Other details of the invention are described in more detail in the description with reference to the drawing, which shows an example of a device for carrying out the method according to the invention.

Fig. 2 shows part of the container in horizontal section or seen from above towards the horizontal partition.
1 denotes the closed supply container for the paint material, e.g. roasted coffee beans, which container has a filling opening that can be closed by means of a flap 2 and a bottom 3 with emptying openings 4 that can be regulated by means of a rotary damper 16. Underneath is a closed supply chamber 5 with a grinding device in the form of a toothed grinding cone 6 on a shaft 7 and a likewise toothed, through-opening 8 enclosing the grinding cone in the supply container's bottom connection 9. The ground material descends into a funnel-shaped, narrowed collection chamber 10 with an outlet opening 11, from which the ground material falls into a below closed chamber 12, inside which small containers corresponding to packing and collection containers are filled, which are then closed using devices not shown. In the middle chamber or pipelines 13, 14 with outlet nozzles 15 for the high-pressure sprayed inert gas are introduced into the supply chamber 5 for the grinding material. The deep cooling provided by the spraying under high pressure of the inert gas spreads through the appropriate arrangement of the nozzles 15 over the entire chamber 5 and the material to be ground therein. Carbonic acid is preferably used as the inert gas. Nitrogen can also be used. The ends of the pipelines 13, 14 are provided with corresponding outlet nozzles 15, and these are directed directly at parts of the grinding device 6, 8 and 9 so that these too are exposed to a direct cooling effect. The connected collection chamber 10 and the below overflow chamber 12 for the paint material can also be filled with resp. through the grinding device 6 to 9, inert gas is continuously supplied, which, when the pressure rises and is sprayed, produces deep cooling. With constant new supply of deep-cooling, inert gas such as e.g. carbon dioxide and nitrogen, the removal of the displaced air can take place through non-return valves arranged in the chamber walls, which only open outwards. In the storage container 1, the air can also be displaced by the deep-cooling, indifferent gas rising from below from the chamber upwards through the grinding material.
