Abstract
Se describen masas mejoradas que contienen productos de papa deshidratada, los productos alimenticios elaborados a partir de estas masas y los metodos para su elaboracion. Aunque las masas mejoradas contienen productos no ideales de papa deshidratada, la eficacia del procesamiento y la calidad del producto terminado son comparables con las correspondientes a los productos terminados elaborados a partir de masas que contienen productos de papa deshidratada con 40% a 60% de celulas rotas y 16% a 27% de concentracion libre de amilasa.
