Abstract

Se describen mezclas de bebida con sabor a chocolate, nutricionales y otras mezclas comestibles que se fortifican con fuentes de hierro sumamente biodisponible tales como fumarato y sulfato ferroso, que no desarrollan color gris indeseable cuando la mezcla de bebida se reconstituye con agua o leche, aun cuando el agua o leche ha sido hervida. Este problema de desarrollo de color gris se resuelve incluyendo ácidos comestibles tales como ácido cítrico o málico como agentes de amortiguamiento en la mezcla de bebida de tal forma que al pH de la bebida de chocolate reconstituida es de aproximadamente 6.5 o menor. Un beneficio adicional de incluir estos ácidos/sales de amortiguamiento comestibles es que tienden a estabilizar el aroma a chocolate en la bebida reconstituida. La inclusion de estos ácidos/sales de amortiguamiento comestibles en las bebidas con sabor a chocolate listas para servir, fortificadas con estas fuentes de hierro sumamente biodisponibles, también evita la formacion del color gris indeseable.
